  • 450ml Water (approx. 2 cups)
  • About 20 stalks of Chives or Green Onions (approx. 100g)
  • About 15 strands of Cooked Fiddlehead Fern (approx. 100g)
  • 9 long-cut pieces of Well-fermented Kimchi (approx. 200g)
  • Salt to taste (adjust as needed)
  • Plenty of Cooking Oil

Cooking Instructions

Step 1

First, let’s prepare the batter, the soul of a delicious Kimchi pancake. In a bowl, combine 300ml of pancake mix (about 1.5 standard cups) with 450ml of water (about 2 standard cups). Whisk until smooth, ensuring there are no lumps. You can adjust the amount of water slightly to achieve your desired batter consistency. A good ratio to aim for is 1 part pancake mix to 1.5 parts water.

Step 1

Step 2

Now, let’s prepare the ingredients that will add wonderful flavor to your Kimchi pancake. Wash and chop the chives or green onions into bite-sized pieces. Trim any tough parts from the cooked fiddlehead fern and cut them into suitable lengths. Long-cut well-fermented kimchi is also ready. (Tip: If you enjoy seafood, adding shrimp or squid can enhance the flavor even further!)

Step 2

Step 3

It’s time to cook the Kimchi pancake! Heat a frying pan over medium heat and add a generous amount of cooking oil. Ladle about 150ml to 200ml (about one ladleful) of batter into the pan, spreading it thinly into a round shape. It’s important to make it thin, as a thick pancake can turn out soggy.

Step 3

Step 4

Arrange the prepared chives (or green onions), fiddlehead fern, and kimchi attractively over the batter, alternating them for a nice visual appeal. After placing the ingredients, lightly sprinkle some more batter over them. This helps the ingredients stick well and makes the pancake look even more appetizing.

Step 4

Step 5

Now, let’s cook the Kimchi pancake. When you gently shake the pan and the batter is firm and holds its shape (not runny), it’s time to flip it. Let it cook for about 7 minutes. Ensuring the bottom is golden brown will help it flip nicely.

Step 5

Step 6

Carefully flip the Kimchi pancake using a spatula. If the pancake moves smoothly in the pan when you shake it again, it’s cooking well. Continue to cook until both sides are a beautiful golden brown color.

Step 6

Step 7

Once both sides are perfectly golden brown and crispy, transfer the delicious Kimchi pancake to a plate. It’s best enjoyed hot right off the pan! Enjoy your meal!
