Fish Cake and Tofu Sandwich Pancake
Fish Cake and Tofu Sandwich Pancake – Great as a side dish or a snack!
A healthy side dish made easily with fish cakes and tofu.
Main Ingredients- 2 sheets of square fish cake
- 1/2 block of firm tofu
- 1 egg
Cooking Instructions
Step 1
First, prepare the tofu and fish cakes. Slice the tofu into 1cm thick pieces, and cut the fish cakes into similar sizes or shapes as the tofu. Slice them to a thickness that won’t be too thin after coating and frying.
Step 2
Press the sliced tofu with paper towels to remove as much moisture as possible. Excess moisture can cause the coating to detach and the sandwich to fall apart. Then, lightly and evenly coat one side of the tofu with flour. Place a slice of fish cake on the floured tofu, lightly dust the fish cake with flour, and then top it with another slice of tofu to form a sandwich.
Step 3
With the tofu and fish cake sandwiched together, coat the entire item evenly with a thin layer of flour. Ensure it’s thoroughly coated so the egg wash adheres well and prevents the pancake from falling apart.
Step 4
Crack the egg into a bowl and whisk it well to make an egg wash. Dip the flour-coated fish cake and tofu sandwich into the egg wash, ensuring both sides are evenly coated. Aim for a thin coating of egg.
Step 5
Heat a generous amount of cooking oil in a frying pan over medium-low heat. Carefully place the egg-coated fish cake and tofu sandwich into the hot pan. Pan-fry, turning occasionally, until both the top and sides are golden brown and cooked through. Adjust the heat as needed to prevent burning, and ensure it’s cooked thoroughly on the inside.
