  • King oyster mushroom 1
  • Garlic 2 cloves

  • Bonito flake stock 1.5-2 ladles
  • Salt to taste

Cooking Instructions

Step 1

First, prepare the bonito flake stock, which will form the flavorful base of your spaghetti sauce. Bring water to a boil, add the bonito flakes, turn off the heat, and let it steep for about 1 minute to infuse the flavor. Strain the liquid through a sieve to get a clear stock. While the stock is steeping, start cooking the tricolor spaghetti according to the package instructions. Preparing the sauce while the pasta cooks will save you time.

Now, let’s build up the delicious flavors. Heat a pan over medium-low heat and add the extra virgin olive oil. Sauté the minced garlic and peperoncino until fragrant. Be careful not to burn the garlic. Next, add the sliced king oyster mushrooms and bacon, and sauté until lightly browned, taking care not to scorch them. Season lightly with salt and pepper. Add about 3 tablespoons of white wine and cook for about 1 minute until the alcohol evaporates, leaving behind a pleasant aroma.

It’s time to bring everything together! Add about one ladle of the prepared bonito flake stock to the pan. Sprinkle in a little parsley flakes. Add the cooked tricolor spaghetti and toss it with chopsticks as if stir-frying, ensuring the sauce coats the pasta evenly. Continue cooking until about 2-3 tablespoons of sauce remain. Stir in about 1/2 teaspoon of extra virgin olive oil to give it a glossy finish and toss quickly to combine. For an extra touch of richness, grate some Grana Padano cheese over the top.
