This recipe creates perfectly fluffy fried rice with distinct grains of rice, beautifully complemented by a creamy scrambled egg topping, making it an ideal weekend lunch. Even though we’re using healthy rice mixed with brown and black soybeans, the taste is absolutely top-notch. Shall we make this delicious bacon kimchi fried rice using Baek Jong-won’s special tips? (Based on a standard soup spoon / measuring cup or paper cup)
Main Ingredients- 1 bowl of freshly cooked rice (approx. 200g)
- 1 egg
- 3 strips of thick-cut bacon
- 2/3 bowl of well-fermented kimchi (finely chopped)
- 1/4 green onion (finely chopped)
- 2-3 Tbsp cooking oil
Seasonings & Others- 1 Tbsp oyster sauce
- 0.5 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp cooking wine (mirin)
- Pinch of salt (for egg)
- 1 Tbsp oyster sauce
- 0.5 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp cooking wine (mirin)
- Pinch of salt (for egg)
Cooking Instructions
Step 1
If you want to cut through the richness and add a spicy kick, consider adding about half a finely chopped Cheongyang pepper (a type of Korean chili). Omit the Cheongyang pepper if serving to children or those who prefer milder flavors. For the scrambled eggs, beat the egg with 1 tablespoon of cooking wine and a pinch of salt, then set aside.
Step 2
Heat 2-3 tablespoons of cooking oil in a pan over medium heat. Add the chopped green onion and 1 tablespoon of minced garlic, stir-frying slowly until fragrant to create scallion oil. Once the scallion aroma is released, add the sliced bacon and cook until golden brown. The bacon will render its own delicious fat, adding even more flavor to the dish. Feel free to substitute bacon with Spam or canned tuna for a different twist.
Step 3
Baek Jong-won’s method involves pushing the ingredients to one side of the pan and caramelizing soy sauce, but here, we’ll use oyster sauce instead of soy sauce and add the kimchi directly to stir-fry. Using leftover cold rice will result in fluffier fried rice. If your rice is hard and clumpy from being refrigerated, microwave it for about 1 minute to slightly warm it up, making it easier to break apart and stir-fry. Add the rice and stir-fry thoroughly until the kimchi and bacon flavors are evenly distributed.
Step 4
Here’s a pro-tip to elevate your fried rice! Add 1 tablespoon of oyster sauce for a savory depth. For a nutty aroma, sprinkle in 1 tablespoon of toasted sesame seeds. If using Cheongyang peppers, add them now for a spicy and zesty flavor. The key is to stir-fry the rice until each grain is separate and fluffy, avoiding any clumps.
Step 5
Transfer the well-stir-fried bacon kimchi fried rice into a bowl, pressing it down firmly to shape it. Pressing it down helps maintain its form when you plate it.
Step 6
You can opt for a sunny-side-up fried egg on top, but for a wonderfully creamy texture, we’re making scrambled eggs. Spoon the prepared scrambled eggs generously over the fried rice.
Step 7
Invert the shaped fried rice onto a plate. Then, arrange the creamy scrambled eggs around the perimeter of the fried rice for a visually appealing presentation. A perfectly fried egg with a runny yolk also works beautifully.
Step 8
And there you have it – a delicious bacon kimchi fried rice recipe, complete with fragrant scallion oil, savory bacon, and crisp kimchi! This one-bowl meal is perfect for a satisfying weekend lunch.
Step 9
I made a generous portion of kimchi fried rice since it’s been a while, but it was so good that I finished it all in no time! Before I knew it, the plate was empty. (laughs)
