Main Ingredients- 600g Pork (thinly sliced pork belly or neck recommended)
- 1/2 Pear (grated to yield juice)
Special Sauce- 3 Tbsp Soy Sauce

- A little Green Onion (chopped)
- 1 Tbsp Minced Garlic

Cooking Instructions
Step 1
The key to delicious stir-fried pork is the meat! Prepare thinly sliced pork belly or neck. Lightly pat dry any excess blood with paper towels, then slice it once or twice if it’s too long, to ensure the sauce marinates well. (If using thicker cuts, slicing them smaller will be better.)
Step 2
Now it’s time to prepare the pear, which will tenderize the meat and add sweetness. Grate half a pear finely using a blender or grater to get about 1 cup of juice. This pear juice is the secret to making the pork tender and removing any gamey odors!

It’s time to add the special sauce to the prepared pork. First, add 3 tablespoons of soy sauce, which will form the base of the sauce. Soy sauce adds a savory depth that makes all the ingredients delicious.

Add 3 tablespoons of mirin (rice wine) to add sweetness and flavor. Mirin helps to remove any porky smell and enhances the sauce’s overall aroma.

Next, add 3 tablespoons of sugar to adjust the sweetness. Mix the sugar, pear juice, and all other ingredients together thoroughly, massaging the pork to ensure the sauce penetrates evenly. This marinating process adds depth to the flavor.

Now we’re almost done! Add the chopped green onion for fragrance, 1 tablespoon of minced garlic, 2 tablespoons of nutty sesame oil, and finally, a pinch of black pepper. Mix everything together again to combine all the flavors. You’ll notice a delicious aroma as the ingredients meld.

It’s best to marinate the sauced pork in the refrigerator for at least 1 hour. If you have time, letting it marinate for 2-3 hours will result in an even deeper flavor.
