Muffin Batter Ingredients- 10g Bread flour
- 90g All-purpose flour
- 12g Almond flour
- 40g Cream cheese (room temperature)
- 40g Butter (room temperature)
- 80g Sugar
- 1 Tbsp Rum (optional)
- 2 Eggs (room temperature, lightly beaten)
- 2g Baking powder
- 8g Milk powder
Cheese Topping Cream Ingredients- 80g Cream cheese (room temperature)
- 1 Egg yolk
- 25g Powdered sugar
- 80g Cream cheese (room temperature)
- 1 Egg yolk
- 25g Powdered sugar
Cooking Instructions
Step 1
First, ensure your butter and cream cheese are at room temperature for at least 30 minutes until softened. In a bowl, combine the softened butter and cream cheese. Gradually add the sugar in 2-3 additions while whisking with a hand mixer or a whisk until the mixture becomes smooth and creamy, resembling mayonnaise. Once the butter is well-creamed, add the lightly beaten eggs in 3-4 batches, mixing well after each addition to prevent separation. Finally, sift in the almond flour and gently mix until just combined.
Step 2
Sift together the bread flour, all-purpose flour, baking powder, and milk powder twice. Add these dry ingredients to the butter-cream cheese mixture. Using a spatula, gently fold the ingredients together until just combined and no dry streaks remain. Do not overmix. The batter should be pourable, like thick pancake batter. Transfer the batter into a piping bag.
Step 3
Now, prepare the cheese topping cream. In a separate bowl, cream the softened cream cheese until smooth. Add the powdered sugar and mix until you achieve a smooth, mayonnaise-like consistency.

Add the egg yolk to the cheese topping mixture. Whisk thoroughly until everything is well incorporated and the topping cream is smooth and glossy.

Line a muffin tin with paper liners. Carefully pipe the muffin batter into each liner, filling them about 80% full. Filling them too full might cause the muffins to overflow as they bake. Using a piping bag for the batter helps create a neater finish, especially since the batter can be quite fluid.
Step 6
Transfer the cheese topping cream into a clean piping bag. Pipe a generous amount of the topping cream onto the center of each muffin batter, pressing down slightly into the batter. This will allow the topping to create a delicious filling within the muffin.
