Sandwich Ingredients

  • 150g Chicken tenderloin

  • 1 tsp Soy sauce
  • 1 tsp Oyster sauce
  • 1 tsp Mirin (cooking wine)
  • 1 tsp Sugar
  • 1 tsp Corn syrup
  • 1/2 tsp Minced garlic
  • 1/4 Korean chili pepper (optional, to taste)

Cooking Instructions

Step 1

Prepare the chicken tenderloin by rinsing and patting it dry. Season generously with salt and pepper. Marinate for at least 30 minutes, or ideally overnight for a deeper flavor.

Step 2

For the best sandwich presentation, trim the chicken tenderloin so its thickness is even. If it’s particularly thick on one side, carefully slice it or pound it gently to create a flatter, more uniform piece.

Step 3

In a small bowl, combine all the BBQ sauce ingredients: soy sauce, oyster sauce, mirin, sugar, corn syrup, and minced garlic. Stir well until the sugar is dissolved. If you enjoy a bit of heat, finely chop the Korean chili pepper and add it to the sauce.

Step 4

Heat a generous amount of cooking oil in a skillet over medium heat. Place the marinated chicken tenderloins in the pan and cook until they are golden brown on both sides.

Step 5

Once the chicken is nicely browned, pour the prepared BBQ sauce over it. Reduce the heat to medium-low to prevent the sauce from burning. Continue to cook, stirring occasionally, until the chicken is coated in a glossy sauce. (Tip: Add the sauce only after the chicken has started to cook to avoid burning.)

Once the chicken is coated and glazed with the sauce, you can optionally sprinkle some finely chopped scallions over the top for an added aromatic touch.

While the chicken rests, prepare the ciabatta bread. Slice it in half horizontally. To keep it warm and soft, you can wrap it in foil or place it on a warm surface.

Spread a generous layer of mayonnaise on the cut sides of both halves of the ciabatta bread. Then, arrange the fresh chicory or your chosen greens evenly over the bottom half.
