Ingredients

  • 1 Tbsp dried shrimp powder
  • 1/2 small onion
  • 1/2 stalk green onion
  • 1 egg
  • 1 clove garlic
  • 2/3 bowl of cold rice (based on a standard rice bowl)
  • 1/2 Tbsp soy sauce
  • 3 drops sesame oil
  • 1 pinch salt

Optional Ingredients

  • 1 button mushroom
  • 1/6 zucchini (scraps)
  • 1/6 carrot (scraps)

Cooking Instructions

Step 1

First, let’s grind the dried shrimp into a powder.

Here are the ingredients prepared. Feel free to actively use any leftover vegetables you have! ^^

Finely mince the green onion and garlic. Dice the remaining ingredients into small pieces.

Heat a pan over medium heat and add 2 tablespoons of cooking oil. Add the minced green onion and garlic first and sauté until fragrant.

Once the green onion and garlic are golden brown and aromatic, add 1 tablespoon of dried shrimp powder and stir-fry.

After stir-frying for about 30 seconds to 1 minute, add all the other chopped vegetables and continue to sauté.

Push the sautéed vegetables to one side of the pan. Tilt the pan slightly off the heat in the empty space and crack one egg into it.

Wait for about 5 seconds, then scramble the egg with a spatula and stir-fry. Add a pinch of salt and mix everything together.

Add about 2/3 of a bowl of cold rice to the pan. Use a wooden spatula or turner to break up the rice grains so they are fluffy and incorporate them with the other ingredients.

Pour 1/2 tablespoon of soy sauce around the edges of the fried rice. Wait for about 5 seconds, then stir-fry everything together.

Finally, taste the fried rice and adjust seasoning with salt if needed. Remove from heat. Drizzle with 3 drops of sesame oil.
