Curry Ingredients- 1 Tbsp butter
- 4 blocks of solid curry roux (or the equivalent of 1 standard package)
- 1 onion, thinly sliced
- 6 cloves garlic, thinly sliced
- 1/3 stalk of green onion, diagonally sliced
- 3 cups water (approx. 600ml)
- 1 Tbsp chili powder (optional, for added spice)
Cooking Instructions
Step 1
First, thoroughly wash and peel the onion. Then, slice it thinly into strips. Sautéing the onions well will bring out their natural sweetness, enhancing the curry’s overall flavor profile.
Step 2
Peel the 6 cloves of garlic and slice them thinly. These sliced garlic pieces will be fried later, adding a nutty aroma and a delightful crispy texture.
Step 3
Now, let’s prepare the vegetables for the curry. Have your sliced onion, sliced garlic, and diagonally sliced green onion ready. Also, prepare the 4 blocks of solid curry roux (or 1 standard package). You can also have 1 Tbsp of chili powder ready if you like extra spice.

Heat a pot over medium heat and melt 1 Tbsp of butter. Once melted, swirl it around to coat the bottom of the pot. The butter’s richness will elevate the flavors of the other ingredients.

Add the sliced onions to the pot with melted butter and sauté until they become translucent. Once the onions start to turn golden brown, their sweetness intensifies, making the curry much richer. Sauté for about 5-7 minutes.

Once the onions are well sautéed, pour in 3 cups (approx. 600ml) of water and bring it to a boil. When the water starts boiling, stir in 1 Tbsp of chili powder and mix well. You can omit this if you prefer a milder curry.

Now, reduce the heat to medium-low once the mixture is boiling vigorously. Let it simmer gently. This simmering process allows the onion’s flavor to fully infuse into the broth, creating a deep taste. Simmer for about 5 minutes.

Once the broth has simmered sufficiently, add the 4 blocks of solid curry roux and slowly dissolve them. It’s crucial to stir continuously to prevent the curry from clumping.

Continue stirring with a spatula, scraping the bottom of the pot, until the curry roux is completely dissolved and the sauce thickens. Cook for an additional 2-3 minutes until it reaches your desired consistency, being careful not to burn it.

While the curry is simmering, heat a separate pan and add the sliced garlic to pan-fry. These will be a special topping to enhance the curry’s flavor.

Fry the sliced garlic over low heat, flipping them occasionally, until they are golden brown and crispy on both sides. Be careful not to burn them. Continue frying until a nutty aroma is released.

Place the nicely fried garlic slices on a paper towel to absorb any excess oil. This will make them even crispier and cleaner to eat.
