  • 2 Tbsp fish sauce
  • 1 Tbsp sugar
  • 1 Tbsp minced garlic

Trim the fins from the prepared flatfish neatly. To remove any potential fishy smell, soak the fish in rice water for about 10 minutes, then rinse under running water. (If using frozen flatfish, thaw and then follow this step.)

In a bowl, combine 3 Tbsp gochugaru, 2 Tbsp soy sauce, 2 Tbsp fish sauce, 1 Tbsp sugar, and 1 Tbsp minced garlic. Mix well to create a delicious sauce. Let it sit for a moment to allow the flavors to meld.

In a deep pot or stew pan, arrange the prepared flatfish attractively. Slice 1 onion into thick strips and spread them evenly over the fish. The sweetness of the onion will enhance the stew’s flavor.
