  • 300g aged fermented kimchi (Muk-eunji)
  • 500g cooked rice (approx. 2.5 bowls)
  • 20g radish sprouts
  • 20g carrot
  • 2 Korean green chili peppers (Cheongyang peppers)
  • 50g onion

First, prepare the vegetables for the rice wraps. Finely julienne the carrot. Mince the onion and Korean green chili peppers. These fresh vegetables will add a wonderful crunch and enhance the overall flavor profile of your ssa­mbap.

Next, let’s make the special sauce that will elevate your ssa­mbap! In a small bowl, combine 1/2 Tbsp of gochujang and 1/2 Tbsp of doenjang. Add the minced onion and Korean green chili peppers. Finally, stir in 1 Tbsp of sesame oil and 1/2 Tbsp of toasted sesame seeds. Mix everything thoroughly until well combined to create a delicious seasoning sauce.

Now it’s time to prepare the rice. Take 500g of freshly cooked, warm rice (about 2.5 bowls) and mix in 1 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds. Gently mix the rice with a spoon or spatula, being careful not to mash the grains. Seasoned rice like this will significantly enhance the taste of your ssa­mbap.

It’s time to use the aged kimchi! Lightly rinse the muk-eunji under running water to remove some of the strong seasoning. (If it’s too sour for your liking, you can soak it in water for a bit longer.) Place about 50g of the seasoned rice onto a sheet of muk-eunji. Spread a small amount of the prepared seasoning sauce over the rice. Top with a sprinkle of fresh radish sprouts and the julienned carrots.

Carefully roll up the muk-eunji, tucking in the filling to create a neat wrap. The elasticity of the kimchi should make it easy to form a nice shape. Just like that, your incredibly simple and beautiful Muk-eunji Ssa­mbap is complete!
