Flavorful Octopus Kimchi Porridge
How to Make Delicious Octopus Kimchi Porridge – A Hearty, Nourishing Dish for When You Lack Appetite or Need a Hangover Cure
On days like this, when the weather is gloomy and rainy, a warm bowl of comfort food is just what you need. Today, I’ve made a hearty kimchi octopus porridge that’s perfect for such occasions. It’s incredibly easy to make, so be sure to follow along!
Ingredients- 3 octopuses
- 2 bowls of leftover cooked rice
- 1/3 head of kimchi
- A little green onion
- 1.5 Tbsp red pepper flakes
- 1 Tbsp minced garlic
- A little sesame oil
- 700g anchovy-kelp broth (or water)
- 2 Tbsp soy sauce
Cooking Instructions
Step 1
First, prepare the aromatics. Finely chop the green parts of the green onion. Chop the kimchi into bite-sized pieces. If your kimchi is very sour, adding a pinch of sugar can enhance its flavor.
Step 2
Here’s our star ingredient: the octopus! We’re using 3 octopuses. If you don’t have octopus, you can substitute with other seafood like squid or shrimp. Clean the octopus thoroughly and cut it into manageable pieces.
Step 3
Heat 1 tablespoon of sesame oil in a pot over medium-low heat. Add the chopped kimchi, 1.5 tablespoons of red pepper flakes, and 1 tablespoon of minced garlic. Sauté for about 2-3 minutes until the kimchi softens and the seasonings are well combined. This step is key for developing a deep flavor in the porridge.
Step 4
Once the aromatics are fragrant and sautéed, pour in 700ml of anchovy-kelp broth. If you don’t have broth, plain water will also work. Bring the liquid to a boil, then reduce the heat slightly.
Step 5
As soon as the broth begins to simmer, add 2 bowls of cold cooked rice. Use a wooden spoon to break up any clumps of rice and stir continuously to prevent sticking. Cook for about 10 minutes, stirring frequently, until the rice grains have softened and the porridge has thickened to your desired consistency.
Step 6
When the rice has broken down and the porridge is thick, add the prepared octopus. Cook for just 1-2 minutes over high heat until the octopus is cooked through. Be careful not to overcook, as this will make the octopus tough and chewy. The octopus is done when it turns opaque.
Step 7
Finally, add 2 tablespoons of soy sauce to season the porridge. Adjust the seasoning to your taste. If it’s not salty enough, add more soy sauce. If you prefer it spicier, you can add a little more red pepper flakes.
Step 8
Finish by adding the chopped green onions and simmering for another moment. This delicious octopus kimchi porridge is ready! If you don’t have green onions, chopped scallions also work well for a fresh garnish. Enjoy it piping hot!
