Flavorful Pork and Eggplant Rice (Sot-bap)

Today, we’re making a delightful Scented Eggplant and Pork Rice using fresh, seasonal eggplants and flavorful ground pork. It’s a dish that will have you clearing your bowl in no time!
Rice Ingredients- Rice 230g (approx. 1.5 cups)
- Fresh eggplants 2 medium
- Ground pork 100g
- Chives 15g
- Beomil Soy Sauce 2 Tbsp (for stir-frying)
- Sugar 1 Tbsp (for stir-frying)
- Cooking oil 4 Tbsp
Seasoning Sauce Ingredients- Beomil Soy Sauce 6 Tbsp
- Finely chopped chives 2 Tbsp
- Minced green onion 1 Tbsp
- Minced garlic 0.5 Tbsp
- Fine gochugaru (Korean chili flakes) 0.5 Tbsp
- Oligosaccharide 0.5 Tbsp
- Toasted sesame seeds 1 Tbsp
- Sesame oil 2.5 Tbsp
- Beomil Soy Sauce 6 Tbsp
- Finely chopped chives 2 Tbsp
- Minced green onion 1 Tbsp
- Minced garlic 0.5 Tbsp
- Fine gochugaru (Korean chili flakes) 0.5 Tbsp
- Oligosaccharide 0.5 Tbsp
- Toasted sesame seeds 1 Tbsp
- Sesame oil 2.5 Tbsp
Cooking Instructions
Step 1
First, rinse the rice thoroughly. Soak it in water for about 30 minutes. This step is key to achieving perfectly cooked, fluffy rice grains.
Step 2
Heat 2 Tbsp of cooking oil in a pan over medium-high heat. Add the ground pork and stir-fry until it’s no longer pink. Then, add the cubed eggplant (about 1.5cm cubes) and continue to stir-fry. Finally, add 2 Tbsp of Beomil Soy Sauce and 1 Tbsp of sugar. Stir-fry until the eggplant is tender and glossy. Set this mixture aside.
Step 3
In your pot (or rice cooker pot), add the soaked and drained rice. Pour in water in a 1:1 ratio with the rice (e.g., 1.5 cups of rice to 1.5 cups of water). Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and cook for 15 minutes. When the rice is nearly cooked and most of the water has been absorbed, evenly distribute the stir-fried pork and eggplant mixture over the rice. Turn the heat to very low, or turn it off completely, cover the pot, and let it steam for 5 minutes. This resting period allows the flavors to meld beautifully.
Step 4
While the rice is steaming, let’s prepare the delicious seasoning sauce. In a small bowl, combine 6 Tbsp of Beomil Soy Sauce, 2 Tbsp of finely chopped chives, 1 Tbsp of minced green onion, 0.5 Tbsp of minced garlic, 0.5 Tbsp of fine gochugaru, and 0.5 Tbsp of oligosaccharide. Mix well. Finally, add 1 Tbsp of toasted sesame seeds and 2.5 Tbsp of sesame oil for a nutty aroma and rich flavor. This sauce is perfect for drizzling over the freshly cooked Pork and Eggplant Rice.
