A simple yet incredibly delicious pork belly dish! This recipe combines thinly sliced pork belly with a savory and slightly sweet sauce, infused with the aromatic warmth of curry powder. Main Ingredients- Pork Belly (thinly sliced) 250g: This cut cooks fast and absorbs flavors beautifully.
- Onion 1/4: Thinly sliced to add sweetness and depth.
- Perilla Leaves 1: Washed and thinly sliced for a fresh aroma. (Optional)
- Granulated Sugar or Sugar 1/2 Tbsp: Helps to tenderize the meat and adds a subtle sweetness.
Seasoning- Curry Powder 1/2 Tbsp: Adds an exotic and savory flavor.
- Plum Extract 1 Tbsp: Provides sweetness and helps to remove any porky smell.
- Minced Garlic 1 Tbsp: For a rich aromatic boost.
- Ginger Juice 2/3 Tbsp: Essential for tenderizing the meat and eliminating odors. (If unavailable, use a small amount of minced ginger)
- Doenjang (Fermented Soybean Paste) 2/3 Tbsp: Adds a deep umami and savory note, balancing the sauce.
- Whole Sesame Seeds 1 Tbsp: For a nutty flavor and appealing garnish.

Cooking Instructions
Step 1
Heat a pan over medium-high heat. Add the thinly sliced pork belly and sprinkle evenly with the sugar (or granulated sugar). Break up the meat as it cooks to prevent sticking, and stir-fry until it’s lightly browned and has released some of its fat.
Step 2
Once the pork belly is partially cooked, add all the seasoning ingredients to the pan: curry powder (1/2 Tbsp), plum extract (1 Tbsp), minced garlic (1 Tbsp), ginger juice (2/3 Tbsp), and doenjang (2/3 Tbsp). Stir well to coat the pork belly evenly, ensuring the sauce doesn’t burn. Continue to stir-fry for about 1-2 minutes until the sauce is well incorporated.
Step 3
Add the thinly sliced onion to the pan and stir-fry with the pork belly and sauce. Cook until the onions become translucent and tender. The sweetness from the onions will enhance the overall flavor of the dish.
Step 4
Once the onions are cooked through, turn off the heat. Sprinkle the whole sesame seeds (1 Tbsp) over the stir-fry. The residual heat will release their nutty aroma.
Step 5
