  • 1 medium zucchini
  • 1/2 onion
  • 1 Tbsp minced garlic
  • 1 Tbsp saeujeot (fermented shrimp paste), adjust to taste
  • 1 Tbsp gochugaru (Korean chili flakes), adjust to taste
  • 1 Tbsp sesame oil
  • A pinch of sesame seeds

First, wash the zucchini thoroughly. Slice it into relatively large pieces, such as half-moon shapes or bite-sized chunks. Slicing them too thinly can cause them to break apart during cooking, so aim for a moderate thickness.

Heat 1 Tbsp of sesame oil in a pan over medium-low heat. Add 1 Tbsp of minced garlic and the sliced onion, and stir-fry until fragrant. Be careful not to burn the garlic. Sautéing until the onion becomes translucent will add a delicious depth of flavor.

Now, add the sliced zucchini and 1 Tbsp of saeujeot. Saeujeot adds a wonderful umami, but its saltiness can vary, so it’s best to taste and adjust the amount accordingly. Stir-fry the zucchini briefly until it starts to soften. Then, add about 2-3 Tbsp of water, cover the pan, and cook over low heat for about 5 minutes. This steaming process will make the zucchini tender and allow it to absorb the flavors beautifully.
