Flavorful Saeujeot (Shrimp Paste) Stir-Fried Zucchini Recipe
Spicy and Savory Stir-Fried Zucchini with Saeujeot
A quick and easy side dish made with seasonal zucchini! This recipe introduces a golden ratio for stir-fried zucchini enhanced with the umami of saeujeot (Korean fermented shrimp) and the spiciness of gochugaru (Korean chili flakes). It’s perfect as a side dish for rice or even as a simple appetizer.
Main Ingredients- 1 medium zucchini
- 1/2 onion
- 1 Tbsp minced garlic
- 1 Tbsp saeujeot (fermented shrimp paste), adjust to taste
- 1 Tbsp gochugaru (Korean chili flakes), adjust to taste
- 1 Tbsp sesame oil
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, wash the zucchini thoroughly. Slice it into relatively large pieces, such as half-moon shapes or bite-sized chunks. Slicing them too thinly can cause them to break apart during cooking, so aim for a moderate thickness.
Step 2
Heat 1 Tbsp of sesame oil in a pan over medium-low heat. Add 1 Tbsp of minced garlic and the sliced onion, and stir-fry until fragrant. Be careful not to burn the garlic. Sautéing until the onion becomes translucent will add a delicious depth of flavor.
Step 3
Now, add the sliced zucchini and 1 Tbsp of saeujeot. Saeujeot adds a wonderful umami, but its saltiness can vary, so it’s best to taste and adjust the amount accordingly. Stir-fry the zucchini briefly until it starts to soften. Then, add about 2-3 Tbsp of water, cover the pan, and cook over low heat for about 5 minutes. This steaming process will make the zucchini tender and allow it to absorb the flavors beautifully.
Step 4
Once the zucchini is tender, add 1 Tbsp of gochugaru. Gently mix everything together, being careful not to mash the zucchini, to coat it evenly with the chili flakes and impart a vibrant color. If you prefer a spicier dish, feel free to increase the amount of gochugaru.
Step 5
Finally, sprinkle a pinch of sesame seeds on top. Your flavorful Saeujeot Stir-Fried Zucchini is ready! Serve it over hot rice for a delicious rice bowl, or enjoy it alongside other side dishes. Store any leftovers in an airtight container in the refrigerator.
