Salmon Rice Bowl Flavored with Donburi Sauce
A balanced and deeply flavorful salmon and vegetable rice bowl recipe, topped with various colorful vegetables for both nutrition and taste.
Main Ingredients- 2 bowls of freshly cooked rice
- 1 piece of salmon fillet (approx. 150-200g)
- 2 handfuls of oyster mushrooms
- 5cm piece of burdock root
- 3cm piece of zucchini
- 1/4 medium onion
Salmon Marinade & Stir-frying- A little olive oil

- 1 Tbsp sake (or cooking wine)

Cooking Instructions
Step 1
Pat the fresh salmon fillet dry with paper towels and cut it into bite-sized pieces. Sprinkle the salmon with 1 Tbsp of sake and a pinch of herb salt. Let it marinate for about 30 minutes to remove any fishy odor and enhance its flavor.
Step 2
Separate the oyster mushrooms into individual strands. Peel the burdock root and slice it thinly into matchsticks. Thinly slice the onion into matchsticks, similar to the burdock root. Wash the zucchini, cut it into 3cm lengths, and then slice it into thick half-moons.
Step 3
Now, let’s prepare the Donburi sauce. Combine 50ml of mentsuyu with 150ml of water and 50ml of sake in a bowl. If mentsuyu is unavailable, a store-bought bonito dashi broth works perfectly. Whisk all the ingredients together until well combined. (Tip: You can also make your own sauce using soy sauce, sugar, and mirin if you don’t have mentsuyu.)
Step 4
Heat a lightly oiled pan over medium heat. Add the sliced burdock root and stir-fry for about 2-3 minutes until it becomes slightly translucent and tender.
Step 5
While the burdock root is cooking, add the sliced onion, zucchini, and separated oyster mushrooms to the same pan. Increase the heat to high and stir-fry quickly, ensuring the vegetables don’t become too soft. Once the vegetables are just tender-crisp, remove them from the pan and set aside.
Step 6
Return the pan to the heat, adding a little more olive oil if needed. Place the marinated salmon pieces in the pan and sear them until golden brown on both sides. Cook over medium-low heat to ensure the salmon cooks through evenly without drying out.
Step 7
Once the salmon is nicely seared, return the stir-fried vegetables to the pan and gently mix them with the salmon.
Step 8
Pour the prepared Donburi sauce over the salmon and vegetables. Bring the mixture to a simmer and let it cook until the sauce slightly thickens. Be careful not to reduce it too much; you want enough sauce to moisten the rice.
Step 9
Serve the freshly cooked hot rice in a donburi bowl or a regular serving bowl.
