Tteokbokki Ingredients- 10 Garae-tteok (Korean rice cakes, about 300g)
- 8 Square fish cakes
- 1/4 Carrot
- 1/2 Onion
Spicy Sauce- 3 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Gochujang (Korean chili paste)
- 4 Tbsp Soy sauce
- 3 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Gochujang (Korean chili paste)
- 4 Tbsp Soy sauce
Cooking Instructions
Step 1
First, let’s make the foundation for delicious tteokbokki: the anchovy-kelp broth. In a pot, combine 500ml of water, 5 dried anchovies, and 1 piece of dried kelp. Bring to a boil over medium heat. Once boiling, remove the kelp immediately. Let the anchovies simmer for about 5 more minutes, then strain to get a clear broth. While the broth is simmering, rinse the garae-tteok under running water. If the rice cakes are too long, cut them into 4-5cm pieces. Slice the square fish cakes into bite-sized pieces (about 3x5cm), and thinly julienne the carrot. Chop the onion coarsely or cut it into quarters.
Step 2
Now, it’s time to prepare the flavorful sauce. To the prepared anchovy-kelp broth, add 2 Tbsp of gochugaru, 2 Tbsp of gochujang, 3 Tbsp of sugar, and 4 Tbsp of soy sauce. Stir well with a spoon until the paste is dissolved and the sauce is smooth. Once the sauce is well combined, add the prepared rice cakes, fish cakes, carrots, and onions to the pot and start simmering. The amount of broth should be enough to generously cover all the ingredients. As it cooks, stir occasionally with a spoon to prevent the ingredients from sticking to the bottom.
Step 3
It’s important to let the tteokbokki simmer until the sauce thickens and the flavors deepen. Make sure the rice cakes are soft and the fish cakes and vegetables are cooked through. If the sauce becomes too thick, add a little more broth or water to reach your desired consistency. Finally, taste the tteokbokki. If you want it spicier, sweeter, or saltier, adjust by adding more gochugaru, sugar, or soy sauce according to your preference. Once all ingredients are cooked and the sauce has beautifully coated everything, your delicious soupy tteokbokki is ready! Enjoy it piping hot.
