- 5 cloves Garlic
- 1 bag fresh Bean Sprouts (approx. 200-250g)
- 2 Korean Green Chilies (Cheongyang pepper)
- Scallions, a moderate amount
Seasoning Mix- 1.5 Tbsp Soy Sauce
- 0.5 Tbsp Minced Garlic
- 1 Tbsp Oyster Sauce
- 0.5 Tbsp Sugar
- 1.5 Tbsp Soy Sauce
- 0.5 Tbsp Minced Garlic
- 1 Tbsp Oyster Sauce
- 0.5 Tbsp Sugar
Cooking Instructions
Step 1
First, thoroughly wash the bean sprouts under running water. After washing, drain them well in a colander to remove excess water. This step is crucial to prevent the dish from becoming watery and to maintain the sprouts’ crisp texture.
Step 2
Prepare the vegetables: thinly slice half an onion, chop the scallions, and thinly slice or lightly smash 5 cloves of garlic with the side of a knife. Smashed garlic will release more flavor.
Step 3
Prepare about 400g of beef brisket (chadolbagi), the star ingredient. Its thin slices cook quickly, making it perfect for a fast and delicious meal.
Step 4
Let’s prepare the seasoning. Add 1.5 tablespoons of soy sauce to a small bowl. Since oyster sauce will be added later, you don’t need to use too much soy sauce for a balanced savory flavor.
Step 5
Add 0.5 tablespoon of minced garlic to the seasoning mix. Garlic’s aromatic quality will enhance the depth and richness of the dish.
Step 6
Now, let’s start stir-frying. Heat a frying pan over medium heat and add cooking oil generously.
Step 7
Once the pan is hot, add the sliced garlic and sauté over low heat to infuse the oil with garlic aroma. Be careful not to burn the garlic; cook it slowly until fragrant.
Step 8
When the garlic begins to turn slightly golden, add the sliced onion, scallions, and Korean green chilies. Stir-fry them together. If the pan seems too oily during this process, carefully remove about 2 ladles of oil. This will result in a cleaner, less greasy flavor.
Step 9
Once the vegetables are slightly softened and translucent, add the beef brisket. Stir-fry briefly, as the thin slices cook very quickly.
Step 10
When the beef is almost cooked through, add half a tablespoon of sugar and 1 tablespoon of oyster sauce. Adding the sauces at this stage, before the beef is fully cooked, prevents it from becoming tough. This timing is key for tender, flavorful beef.
Step 11
Finally, add the well-drained bean sprouts. Toss everything together quickly. Bean sprouts cook best over high heat for just a short time to maintain their crispness.
Step 12
Once everything is combined, immediately cover the pan with a lid and let it steam for about 5 to 7 minutes. Resist the urge to open the lid during this time. This steaming process allows the bean sprouts to soften slightly while melding all the flavors together beautifully.
Step 13
After the steaming time, lift the lid to reveal your perfectly cooked and delicious stir-fried beef brisket and bean sprouts! The tempting aroma is sure to make your mouth water. It’s a fantastic side dish or a savory snack!
