Flavorful Tuna Kimchi Crab Stick Kimbap Recipe

Main Ingredients

  • 1 can (approx. 150g) Tuna, drained
  • 100g Aged Kimchi, seeds removed and finely chopped
  • 5 Crab Sticks (imitation crab meat)
  • 5 sheets of Gim (seaweed for kimbap)
  • 2 servings of freshly cooked rice (about 400g)
  • 1 Tbsp Deul-gireum (perilla oil)

Rice Seasoning

  • 1 Tbsp Sesame Oil
  • Pinch of Salt
  • Pinch of Toasted Sesame Seeds

Cooking Instructions

In a bowl, combine the freshly cooked warm rice with 1 Tbsp sesame oil, a pinch of salt, and a pinch of toasted sesame seeds. Gently mix the rice using a rice paddle, using a cutting motion to avoid mashing the grains. This seasoning coats each grain of rice, making it more fragrant and flavorful.

Prepare the crab sticks by cutting each one in half. This makes them a good length for filling the kimbap, creating a pleasing appearance and texture when eaten.

Drain the tuna thoroughly using a sieve to remove all the oil. Finely chop the aged kimchi after removing the tough inner core. If your kimchi is very sour, you can rinse it briefly under cold water before chopping.

Heat 1 Tbsp of perilla oil in a pan over medium heat. Add the chopped kimchi and stir-fry until it softens. Then, add the drained tuna and continue to cook until most of the liquid from the kimchi and tuna has evaporated. Stir-frying this mixture deepens the flavors, creating a delicious filling.

Cut each sheet of gim in half lengthwise. Spread about two-thirds of the seasoned rice thinly over the gim, leaving a small border at the top. Place the halved crab sticks in the center of the rice. Carefully roll the gim tightly from the bottom upwards, ensuring the filling is enclosed.

Now, let’s assemble the full kimbap. Place one whole sheet of gim on a rolling mat. Spread about two-thirds of the seasoned rice thinly over the gim. Place one of the previously rolled crab stick rolls in the center of the rice. Spoon a generous amount of the stir-fried tuna and kimchi mixture over the crab stick roll. Tightly roll the kimbap from the bottom up, tucking in the sides as you go. Press gently to seal. Your delicious Tuna Kimchi Crab Stick Kimbap is ready! You can sprinkle some toasted sesame seeds on top for extra flavor.
