Main Ingredients- 1 serving of freshly cooked rice
- 4 pieces of hollowed fish cakes
- 1 fresh egg
- 4 slices of processed ham
- 50g fresh broccoli
- A pinch of fine salt
- A little cooking oil
Sushi Vinegar Mixture (Su Vinegar)- 3 Tbsp rice vinegar
- 2 Tbsp sugar
- 0.5 tsp fine salt
- 3 Tbsp water
- 1 piece of dried kelp (kombu)
Hollow Fish Cake Simmering Sauce- 30ml water
- 0.5 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 Tbsp oligosaccharide
- 2 Tbsp cooking wine (mirin)
- A pinch of black pepper
- 3 Tbsp rice vinegar
- 2 Tbsp sugar
- 0.5 tsp fine salt
- 3 Tbsp water
- 1 piece of dried kelp (kombu)

- 0.5 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 Tbsp oligosaccharide
- 2 Tbsp cooking wine (mirin)
- A pinch of black pepper
Cooking Instructions
Step 1
Prepare freshly cooked rice using ‘Giwaji No. 1’ rice, a Korean variety known for its chewy texture and subtle sweetness. Gather all other listed ingredients, ensuring they are clean and ready.
Step 2
Briefly blanch the hollowed fish cakes in boiling water to remove any impurities and excess oil. Then, cut them into pieces approximately 2.5cm to 3cm long.
Step 3
In a small pot, combine all the simmering sauce ingredients: 30ml water, 0.5 Tbsp oyster sauce, 1 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp oligosaccharide, and a pinch of pepper. Bring to a boil over medium-high heat. Once boiling, add the cut fish cakes. Reduce the heat to low and gently toss the fish cakes with a spatula, allowing them to simmer and absorb the sauce until lightly coated. Be careful not to overcook, aiming for a subtle flavor infusion rather than heavy seasoning.
Step 4
Blanch the fresh broccoli florets in boiling water with a pinch of salt until they turn bright green. Avoid overcooking, as they should remain slightly crisp. Immediately rinse under cold water, drain well, and break into small florets.
Step 5
Lightly blanch the processed ham slices in boiling water to remove excess oil. Fold each slice in half and make several shallow cuts along the folded edge; then, roll them up to create decorative ham ‘flowers.’ For the egg flowers, separate the egg yolk and white, and cook them into thin omelets. Use a flower-shaped cookie cutter to cut out delicate egg flower shapes.
Step 6
In a microwave-safe bowl, combine all the sushi vinegar ingredients: 3 Tbsp rice vinegar, 2 Tbsp sugar, 0.5 tsp fine salt, 3 Tbsp water, and 1 piece of dried kelp. Microwave for 30 seconds to 1 minute, just until the sugar is dissolved. Pour this mixture over the hot, freshly cooked rice. Using a spatula, gently ‘cut’ and mix the vinegar into the rice without mashing the grains to create perfectly seasoned sushi rice.
Step 7
Using a teaspoon, carefully fill the hollowed fish cakes with the prepared sushi rice. Press the rice gently to pack it in, filling each fish cake about 90% full. Avoid overfilling, as this can cause the sushi to lose its shape.
Step 8
Stand the filled fish cakes upright; they will resemble cute little pillars. They are delicious even at this stage, but we’ll add beautiful decorations in the next step.
