Castella Cake Batter Ingredients

  • 3g Salt
  • 35g Milk (warmed)
  • 2 Tbsp Mirin (or cooking sake)
  • 175g Cake Flour
  • 44g Grapeseed Oil

First, sift the cake flour 2-3 times to ensure it’s fine and airy. This step is key to achieving a super tender cake.

Separate the egg whites from the yolks and place the whites in a clean, cold bowl. Using a hand mixer on high speed, whip the egg whites until stiff peaks form. Gradually add the 90g of sugar in 2-3 additions while whipping to create a stable meringue.

In a separate bowl, combine the egg yolks, the remaining sugar, oligosaccharide, and salt.

Set up a double boiler by placing a wide pot with warm water on the stove. Place the bowl with the yolk mixture over the warm water and whisk gently until the sugar and salt are completely dissolved. This gentle warming helps create a smoother batter.
