Today, we’re making a delicious and nutritious bread using carrots, apples, and nuts, completely flourless! This bread is not only good for your health but also packed with flavor. While this recipe uses an oven, you can achieve similar results more easily with just a microwave. We’ll share the microwave cooking tips at the end. Ingredients- 2 medium carrots
- 1 medium apple
- 1.5 handfuls of pistachios (approx. 30g)
- 4 eggs
- Cinnamon powder (to taste, about 1 tsp)
- Vanilla extract (1-2 dashes, or about 1/2 tsp)
Cooking Instructions
Step 1
First, peel the carrots and cut them into large, rough chunks (about 2-3 cm). This makes them easier to blend in the mixer.

For the topping, thinly slice about a quarter of the apple. Cut the remaining three-quarters into similarly large chunks, just like the carrots. The thinly sliced apple pieces will be placed on top and baked.

Now, get your mixer ready. Crack the 4 eggs into the mixer. Then, add the roughly chopped apple, the roughly chopped carrots, and all the pistachios. Add the ingredients in this order and blend until smooth.

Transfer the blended mixture to a bowl. Add the cinnamon powder and vanilla extract. The cinnamon adds warmth and spice, while the vanilla helps to mask any eggy smell, enhancing the overall flavor. Add about 1-2 dashes of vanilla extract, or about half a teaspoon. Gently stir with a spatula until all ingredients are well combined.

Line a baking sheet with parchment paper (oven-safe paper liner). Spread the batter evenly onto the parchment paper. Aim for a consistent thickness, not too thick. Gently tap the surface of the batter to release any air bubbles. Decorate the top with the thinly sliced apple pieces and the remaining pistachios. Preheat your oven to 180°C (350°F). Bake the bread for about 50 minutes. Baking times can vary slightly depending on your oven, so check for a golden-brown top and insert a skewer into the center; if it comes out clean, the bread is done.
