Fluffy Carrot Cake Made in a Rice Cooker

This cake was a special homemade treat for my son’s 1000th day celebration! I’m not much of a baker, so I opted for a simple method using my electric rice cooker, and it turned out surprisingly delicious! ^^

Cake Batter Ingredients

  • Hotcake mix 400g (approx. 3.5 cups)
  • Milk 200ml (approx. 1 cup)
  • Carrot 1/2 (medium size, approx. 50g)
  • Walnuts and nuts 1 handful (approx. 30g)
  • Egg 1
  • Butter 2 tablespoons (approx. 30g)
  • Sugar 2 tablespoons (adjust to taste)

Cooking Instructions

Step 1

Pour the 400g of hotcake mix into a large bowl and prepare. Sifting the dry ingredients beforehand can result in an even softer cake.

Wash and peel the 1/2 carrot, then finely mince it or shred it thinly. This will ensure the carrot is well-cooked and adds texture to the cake.

Roughly crush the walnuts and other nuts by hand or chop them with a knife. These will add a nutty flavor and delightful crunch to your cake.

Crack 1 egg into a separate small bowl and lightly whisk it. The egg acts as a binder and contributes to the cake’s moistness.

Melt 2 tablespoons of butter by microwaving it for about 30 seconds. Be careful not to overheat it, as it can burn.

Now, add the milk (200ml), prepared carrots, chopped walnuts, melted butter, and whisked egg to the bowl containing the hotcake mix.

Gently mix all the ingredients together using a spatula or whisk until just combined. Don’t overmix; some lumps are okay. Aim for about 70-80% incorporation for a tender cake.

Lightly grease the inside of your rice cooker’s inner pot with butter or cooking oil. This coating will prevent the cake from sticking and make it easy to remove later.

Pour the prepared cake batter into the greased inner pot. Use a spatula to spread it evenly, creating a flat surface.

Select the ‘Steam’ or ‘Cook’ function on your electric rice cooker (or a ‘Cake’ mode if available) and cook for approximately 40 to 60 minutes. Cooking times may vary depending on your rice cooker model. You can check for doneness with a skewer – it should come out clean. (Tip: Use the ‘Cake’ setting if your rice cooker has one for optimal results.)

Once the cake is cooked, carefully remove the inner pot from the rice cooker. Let it cool slightly in the pot before attempting to invert it. Inverting while too hot can cause the cake to break.

Place a plate or cake stand over the inner pot and carefully flip it upside down to release the cake. Thanks to the greased pot, it should slide out smoothly.
