Fluffy Crab Stick and Potato Fried Rice
How to Make Delicious Crab Stick and Potato Fried Rice (Crab Fried Rice Recipe)
I found some leftover cold rice in the pantry and thought about making fried rice. Fortunately, I had some imitation crab sticks and potatoes left in the fridge, so I decided to make Crab Stick and Potato Fried Rice. It’s simple yet incredibly flavorful!
Ingredients- 1/2 Onion, finely chopped
- 3 pieces Imitation Crab Stick (surimi), shredded or finely chopped
- 1 Korean Green Chili Pepper, deseeded and finely chopped (adjust to your spice preference)
- 1/2 Potato, diced small or chopped
- 3 Eggs
- 3 Tbsp Cooking Oil
- 2 tsp Salt (or to taste)
- Pinch of Black Pepper
- 1 Tbsp Chili Oil
- 2 servings Rice (cold rice works best)
- Ketchup, for drizzling (optional)
Cooking Instructions
Step 1
First, prepare all your vegetables and imitation crab sticks. Finely chop 1/2 onion. Shred or finely chop 3 pieces of imitation crab stick. Deseed and finely chop 1 Korean green chili pepper (you can adjust the amount based on your spice preference). Dice 1/2 potato into small cubes or chop it. Having all your ingredients prepped beforehand makes the cooking process much smoother.
Step 2
Crack the 3 eggs into a bowl and whisk them well. Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Pour in the whisked eggs and stir them gently with chopsticks or a fork to create scrambled eggs. Cook until they are just set but still soft, then remove from the pan and set aside.
Step 3
Add another 2 tablespoons of cooking oil to the same pan and heat over medium heat. First, add the diced potatoes and chopped green chili pepper and stir-fry until the potatoes become slightly tender and translucent. Once the potatoes are partially cooked, add the chopped onion and shredded imitation crab sticks. Continue to stir-fry until the onion is translucent and fragrant.
Step 4
Season the stir-fried ingredients with 2 teaspoons of salt and a pinch of black pepper. Mix well to ensure even distribution of seasoning. Taste and add more salt if needed. For an extra umami boost, you can also add a little oyster sauce at this stage (optional).
Step 5
Add the 2 servings of cooked rice and the reserved scrambled eggs to the pan, along with 1 tablespoon of chili oil. Gently stir and mix everything together with a spatula until well combined. Continue to stir-fry until the rice grains are separate and everything is heated through. Your delicious Crab Stick and Potato Fried Rice is now complete!
Step 6
Serve the warm Crab Stick and Potato Fried Rice in bowls. It pairs wonderfully with kimchi for a refreshing contrast, or you can drizzle a little ketchup over the top for a different flavor profile. Enjoy this hearty and delicious meal made with simple ingredients!
