Making Mini Cakes with Cream and Strawberries Sandwiched in Soft Castella
§ Today’s Sweet Snack Menu! § My child is asking for cake. For our little one who enjoys everything I make, I decided to use the Castella cake we have at home to create simple yet delicious cream and strawberry sandwiches and mini cakes. I’ll introduce this super easy recipe that results in a wonderful dessert without special ingredients!
Main Ingredients- 3 slices Castella bread
- 5 strawberries
- 1 kiwi
- 2 cups heavy cream (using a soju cup for measurement)
- 1.5 Tbsp sugar
Cooking Instructions
Step 1
First, wash and prepare the fresh strawberries. These will be the filling for our cakes.
Step 2
We have prepared the Castella bread which will be the base, strawberries for a touch of sweetness, fresh cream for a smooth texture, and sugar. We’re going to make a wonderful dessert with these simple ingredients.
Step 3
Take 2 slices of Castella bread and cut each in half, resulting in 4 pieces. Use 1 piece as is, and spread a generous amount of whipped cream (mixed with sugar) onto the remaining 3 pieces. Hull the strawberries and leave them whole or slice them into 2-4 pieces as preferred.

Now, let’s make the star of the cake: the sweet and fluffy fresh cream. In a bowl, combine the heavy cream and sugar. Use a hand mixer to whip the cream. Hold the beaters in the bowl and press down as you whip.
Step 5
It takes about 2 minutes to achieve a sweet and firm whipped cream. You need to keep pressing down on the mixer, so your arm might get a little tired, but hang in there for the delicious cream! It’s best to whip until stiff peaks form.
Step 6
We’ll use all 4 pieces of the prepared Castella bread for both the sandwiches and the mini cakes. Along with the fresh strawberries, we’ll also add some sweet kiwi. Peel and thinly slice the kiwi.
Step 7
It’s time to make the sandwich cakes. Spread a generous amount of the whipped cream onto one piece of the prepared Castella bread. Ensure the entire surface is covered with the smooth cream.
Step 8
Arrange the fresh strawberries beautifully on top of the cream, and add a few slices of kiwi. Then, place another piece of Castella bread on top. Just like that, your simple Castella cream strawberry sandwich mini cake is complete! Isn’t it easy?

Now, let’s make the mini cakes. Similar to the sandwich cakes, spread cream onto a piece of Castella bread. Arrange the sliced kiwi attractively on top.
Step 10
Add plenty of cream over the kiwi, and top with a few fresh strawberries. Finally, place another piece of Castella bread on top and generously frost the top of the cake with cream for decoration. It melts in your mouth with its incredible softness. Try to make them look as lovely as in the picture below.
