Today, we’re making Tamagoyaki Sando, a Japanese-style egg sandwich bursting with a wonderfully fluffy texture. This sandwich highlights the rich flavor of eggs, making it a delightful dish. Its incredible softness and delicious taste will surely impress!
Ingredients- 2 slices of bread (choose your preferred thickness)
- 3 fresh eggs
- 50ml milk
- 1 Tbsp mirin (sweet rice wine)
- 1 Tbsp mentsuyu (or soy sauce)
- 1 Tbsp sugar
- A little cooking oil (for cooking)
- 1 Tbsp whole grain mustard
- 1 Tbsp mayonnaise
Cooking Instructions
Step 1
First, carefully crack 3 fresh eggs into a clean bowl. The quality of your eggs will significantly impact the final flavor of your sandwich.
Step 2
Add 50ml of milk to the eggs. Using a fork or whisk, gently beat the eggs and milk together until just combined. Avoid over-whisking, as this can create too much foam.
Step 3
For an exceptionally smooth texture, strain the beaten egg mixture through a fine-mesh sieve. This step removes any remaining egg white strands (chalazae), resulting in a silky-smooth custard.
Step 4
To the strained egg mixture, add 1 Tbsp of mirin for a subtle sweetness and aroma, 1 Tbsp of mentsuyu (or soy sauce) for umami depth, and 1 Tbsp of sugar. Whisk gently until all ingredients are well incorporated. If mentsuyu isn’t available, regular soy sauce works too.
Step 5
While the egg mixture is being seasoned, prepare your 2 slices of bread. Thinly spread 1 Tbsp of whole grain mustard on the inside of one slice and 1 Tbsp of mayonnaise on the inside of the other. The mustard adds a zesty kick, while the mayonnaise contributes creaminess and richness. (Step 4 has been rephrased to be distinct from Step 3).
Step 6
Lightly oil a non-stick pan and heat it over medium-low heat. Pour in the prepared egg mixture, creating a thick layer. Cook slowly over low heat to ensure the egg cooks through evenly without burning. Once cooked, remove the egg from the pan and cut it in half.
Step 7
Place the halved, thick egg layer onto one of the bread slices, on top of the mustard or mayonnaise. Position it so the smoother side is facing up for an appealing presentation.
Step 8
Cover the egg with the second slice of bread to complete the sandwich. Gently press down with your hands to help the bread and egg adhere.
Step 9
To achieve the signature neat look of Tamagoyaki Sando, trim off the crusts from all sides of the sandwich. Then, cut the sandwich into your desired serving size, typically in half diagonally to form two triangles. Using a serrated knife will help prevent the bread from being crushed.
