Cooking Instructions
Step 1
In a medium bowl, combine the room-temperature egg, vanilla extract, Himalayan pink salt, and the softened cream cheese. Whisk or stir until well incorporated, ensuring there are no lumps.
Step 2
Set the bowl over a saucepan of simmering water (double boiler method). Gently whisk the mixture continuously until the cream cheese is fully melted and the ingredients are smoothly combined. This gentle heating helps create a wonderfully smooth batter.
Step 3
Remove the bowl from the heat. Add the erythritol (or your chosen sweetener) and stir until it’s dissolved into the mixture. Taste and adjust sweetness if needed.
Step 4
Sift the almond flour, coconut flour, and baking powder directly into the bowl with the wet ingredients. Whisk everything together until just combined and a smooth batter forms. Be careful not to overmix.
Step 5
Preheat a non-stick skillet or griddle over low heat. Add a small amount of olive oil or butter, then use a paper towel to wipe the pan lightly, ensuring a thin, even coating.
Step 6
Pour about 1 tablespoon (or 10g) of batter onto the preheated pan for each pancake. Cook for about 3 minutes on the first side, allowing them to gently puff up.
Step 7
You’ll know it’s time to flip when small bubbles start to appear on the surface and the edges look set. The underside should be a lovely golden-brown color. Carefully slide a spatula underneath and flip.
Step 8
Cook the second side for another 2 minutes, or until golden brown and cooked through. Transfer the finished pancakes to a plate and let them cool slightly before serving.
Step 9
Serve your delicious keto pancakes topped with sugar-free strawberry jam for a delightful treat. (Recipe ID: @6998276)
Step 10
Alternatively, top with a dollop of grass-fed butter, fresh strawberries, and blueberries. A light sprinkle of erythritol or a low-carb syrup can add extra sweetness if desired.
