Main Ingredients
- 1 handful of cabbage (approx. 50g)
- 4 fresh eggs
- 1 ripe tomato
- 3 Tbsp milk (45ml)
- 2 slices of cheese
Seasoning & Others
- Salt to taste
- Cooking oil, generous amount
- Salt to taste
- Cooking oil, generous amount
Cooking Instructions
Step 1
First, prepare the cabbage that will add flavor to your omelette. Wash the cabbage thoroughly and then thinly slice it into pieces about 0.5cm thick. If they are too thick, they will take longer to cook, so it’s best to slice them thinly.
Step 2
Make the base egg mixture for the omelette. Crack 2 fresh eggs into a bowl, add 2 Tbsp of milk and a pinch of salt. Gently whisk the eggs with a fork until the whites and yolks are well combined. Be careful not to whisk too vigorously, as too much foam can cause the omelette to break apart.
Step 3
Heat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Add the prepared sliced cabbage and sauté until it becomes translucent. It’s important to sauté until the cabbage sweetens and softens. You can add a tiny bit of salt while sautéing for seasoning.
Step 4
Push the sautéed cabbage to one side of the pan. Add a little more cooking oil, then pour in half of the beaten egg mixture (from 2 eggs). As the egg begins to set slightly, use a spatula to gently gather the edges towards the center. This will help shape the omelette beautifully.
Step 5
Once the edges are set, carefully pour the remaining egg mixture (from the other 2 eggs) over the top. Tilt the pan slightly to help the egg mixture spread evenly.
Step 6
When the omelette is halfway cooked, place one slice of cheese neatly on top. As the cheese melts, it will blend with the omelette, creating a richer and more savory flavor.
Step 7
Carefully fold one half of the omelette over the cheese. Allow the cheese to melt and shape the omelette nicely. Cook on low heat for a little longer until the inside is fully cooked.
Step 8
Now, let’s make a tomato omelette! Wash the ripe tomato thoroughly and dice it into small pieces (about 1cm). Lightly oil a heated pan, add the diced tomatoes, sprinkle a little salt, and sauté until softened. Avoid overcooking to preserve the tomato’s fresh, sweet-and-sour flavor.
Step 9
In a separate bowl, crack the remaining 2 eggs, add 1 Tbsp of milk, and whisk gently with a pinch of salt. Pour about half of this egg mixture over the sautéed tomatoes. Similar to before, gather the edges towards the center to shape it.
Step 10
When this omelette is halfway cooked, place the remaining slice of cheese on top and fold it in half. Cook a little longer on low heat until cooked through, completing your delicious and fluffy tomato cheese omelette. You can enjoy both omelettes together or choose just one based on your preference. Enjoy your homemade brunch!
