Inspired by a frittata my friend made as a wine appetizer, I decided to try making it myself for a hearty breakfast option. It turned out surprisingly fluffy, packed with nutrients, and simply delicious! This dish is wonderfully versatile, serving as a satisfying light meal or an elegant appetizer for any occasion.

The quantity of vegetables for a frittata isn’t strictly defined. Feel free to use up leftover vegetables from your fridge or adjust the amounts according to your preference – it will still be delicious! For this recipe, we’re using onion, cherry tomatoes, and spinach as a base.

In a large bowl, crack in 4 large eggs. Add a pinch of salt and 1/4 cup of milk. Whisk everything together thoroughly with a fork or whisk until the yolks and whites are well combined and the milk is evenly incorporated. Don’t overmix, just ensure it’s smooth. You can add a pinch of black pepper for extra flavor.

Prepare your vegetables. For the spinach, trim off any yellow or wilted leaves and cut off the tough stems. Wash the leaves thoroughly under running water. Halve the cherry tomatoes. Peel and thinly slice the half onion.

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the sliced onions and a pinch of salt, then sauté until they become translucent. Add the halved cherry tomatoes and cook for another minute. Finally, add the washed spinach and stir until it just begins to wilt. Once the vegetables are slightly softened, pour the beaten egg mixture evenly over them.

Once the egg mixture is poured, immediately cover the skillet with a lid. Reduce the heat to the lowest setting on your stove. Let it cook gently for about 5 minutes, allowing it to steam and set. This low-and-slow cooking method ensures the frittata cooks through without burning, resulting in a wonderfully tender texture. Check the top to see if it’s set.

Carefully slide the finished frittata from the skillet onto a serving plate. Cut it into wedges for serving. An excellent tip for a cleaner cut is to let the frittata cool down slightly before slicing. While delicious warm, letting it rest for a few minutes makes for neater slices.
