Omelette Rice Filling Ingredients

  • 2 Eggs
  • 1/4 Onion, finely chopped
  • 1/4 cup Mushrooms, finely chopped (button or your favorite)
  • 1 bowl Cooked Rice (preferably day-old)
  • 1/2 imitation crab stick, shredded (optional)
  • 1/2 tsp Minced Garlic (optional)
  • Pinch of salt
  • Pinch of black pepper
  • 1/2 tsp Tuna extract or soy sauce (for light seasoning)
  • A little cooking oil

Special Omelette Rice Sauce Ingredients (for 1 serving)

  • 2 Tbsp Ketchup
  • 2.5 Tbsp Tonkatsu Sauce
  • 1.5 Tbsp Oligodang (corn syrup) or corn syrup
  • 1 tsp Soy Sauce
  • 1/2 cup Water (approx. 100ml)
  • 1/4 Onion, thinly sliced
  • 1/4 cup Mushrooms, thinly sliced (king oyster or button mushrooms recommended)

First, we’ll make the omelette rice filling. Heat a little cooking oil in a pan over medium-low heat. Add the chopped onion and sauté until translucent to release its aroma. Sautéing minced garlic at this stage will enhance the flavor further.

Once the onion is translucent, add the chopped mushrooms and sauté them together. Feel free to add other vegetables like bell peppers or carrots according to your preference. I’ve added shredded imitation crab sticks, as that’s what I had on hand.

Add the cooked vegetables and imitation crab to a bowl of day-old rice. Break up any clumps of rice with a spatula and mix everything well. Season lightly with salt, pepper, and a bit of tuna extract (or soy sauce) for a subtle flavor. Keeping the seasoning mild is key to the charm of omelette rice.

Once the rice is well combined with the ingredients and warmed through, the omelette rice filling is ready. Set this aside in a separate bowl for now.

Now, let’s prepare the sauce that will accompany the fluffy egg and rice. In a separate pan, lightly sauté the thinly sliced onions and king oyster mushrooms (or button mushrooms) until they soften slightly.

Add all the sauce ingredients to the pan with the sautéed vegetables and mushrooms. For one serving: measure out 2 Tbsp ketchup, 2.5 Tbsp tonkatsu sauce, 1.5 Tbsp oligodang (or corn syrup), 1 tsp soy sauce, and 1/2 cup (approx. 100ml) of water.

Place the pan with the sauce ingredients over medium-low heat. Stir continuously with a spatula to prevent sticking and let it simmer for at least 10 minutes. It’s important to simmer long enough for the flavors to meld together.

As the sauce simmers, it will gradually thicken and gain a glossy sheen. Continue stirring and cooking until it reaches your desired consistency. If it becomes too thick, you can add a little more water.

In another pan, lightly grease with oil and preheat over low heat. Pour in the beaten eggs and cook to create a thin, soft omelette. Be careful not to overcook the egg so it remains moist. Turn off the heat once the edges just begin to set.
