Hello everyone! Today, we’re going to make delicious, fluffy potato rice using potatoes, a star ingredient of July. This dish is easily prepared in a rice cooker and offers a wonderful sweetness and tenderness from the potatoes infused throughout the rice.

First, place white rice into your rice cooker. Use about 1/3 less rice than you normally would, as potatoes will be added. Adjust the amount of rice based on the quantity of potatoes you use.

Our household enjoys mixed grain rice, so I’ve added mixed grains and barley. If you typically eat white rice, you can skip this step or add your preferred mixed grains. Incorporating various grains will enhance the flavor of your potato rice.

Rinse the rice thoroughly, then add water to the appropriate level. Use slightly more water than you normally would for plain rice, and let it soak for about 30 minutes. Soaking allows the rice grains to absorb moisture, resulting in softer and more delicious rice.

While the rice is soaking, peel the potatoes. To prevent browning, soak the peeled potatoes in cold water for a short while. This helps maintain their freshness.

After 30 minutes, it’s time to add the potatoes. Small, baby potatoes can be added whole. For medium-sized potatoes, cut them in half, and for large potatoes, cut them into quarters. This size ensures they cook through and become tender alongside the rice.

Now, place the prepared potatoes on top of the rice in the rice cooker. I cut medium-sized potatoes in half because my husband isn’t a big fan of potatoes, and I wanted to make them easier to pick out later. If you need to remove potatoes for anyone, cutting them slightly larger as I did will be convenient. Adjust the potato size according to your preference.

Close the rice cooker and select the ‘cook’ or ‘regular’ setting. Once cooking is complete, your delicious potato rice will be ready! The potatoes should be perfectly cooked and wonderfully fluffy. You can even take out a piece of potato and dip it in salt or sugar for a delightful side treat!

Serve the potato rice with the cooked potatoes, mixing them gently. We had ours with kimchi stew, so no extra seasoning was needed. However, if you’re serving just potato rice or desire a richer flavor, a delicious seasoning sauce can be made with soy sauce, chili powder, a bit of chopped green chili, sesame oil, and sesame seeds. Mix this sauce into the rice for an extra flavorful meal!
