Fluffy Rolled Omelet with Ham and Seaweed

We made a delightful rolled omelet generously filled with sliced ham. It’s incredibly delicious! The combination of fluffy eggs, savory ham, and aromatic seaweed is truly satisfying.

Ingredients

  • 4 large eggs
  • 1/2 teaspoon salt (adjust to taste and egg size)
  • 1 sheet of Gim (seaweed for kimbap)
  • 1 stalk of green onion (white parts preferred)
  • 11 slices of processed ham
  • Cooking oil (for coating the pan)

Cooking Instructions

To make a beautifully fluffy rolled omelet, it’s convenient to use a cup with a handle for the egg mixture. First, crack 4 eggs into a bowl. Add 1/2 teaspoon of salt. The amount of salt can be adjusted based on the size of the eggs and your preference. Remove any chalazae (the stringy white parts) and lightly whisk the eggs with a fork or whisk until smooth.

To prevent the seaweed from crumbling or losing its shape when cut, using Gim specifically for kimbap will result in a neater final product. Gently heat your non-stick pan over low heat and add a little cooking oil. Lay the sheet of Gim onto the pan. Then, pour a thin layer of the egg mixture evenly over the Gim. For the ham, we’ll start by placing 3 slices initially, and then add 4 slices twice more as we roll.

Sprinkle the thinly sliced green onions evenly over the egg-covered Gim for added aroma and flavor. Now, carefully begin to roll the egg mixture from the front of the pan towards the back, being mindful not to let the egg burn. Rolling it tightly from the start will help maintain a good shape.

Slide the first rolled omelet to one side of the pan. Add a little more oil to the empty part of the pan and pour in more egg mixture. Once the egg mixture starts to set slightly, arrange 4 slices of ham neatly on top. Then, carefully roll the existing omelet over the ham. Repeat this process of pouring egg mixture, adding ham, and rolling two more times. We are using 3 slices of ham first, then 4, then another 4 to make it extra hearty. Don’t worry if the shape isn’t perfectly even; we’ll refine it at the end.

Once the omelet is fully rolled, place it onto a bamboo sushi mat (makisu). Gently shape it into a cylinder by rolling it tightly within the mat. Then, place a heavy plate or a small pot on top of the mat-wrapped omelet for about 5 minutes. This pressing step helps to set the shape firmly, preventing it from falling apart when sliced.

Slice the omelet into your desired thickness to reveal the beautiful layers inside. This hearty ham and seaweed rolled omelet is delicious on its own, as the seasoning is just right.
