Omelette Ingredients
- 3 fresh eggs
- 1 Tbsp butter
- A pinch of salt
Sauce (Optional)
- 1 Tbsp butter
- 3 Tbsp store-bought tomato sauce
- 3 slices of Parmesan cheese (block), approx. 20g
- 1 Tbsp butter
- 3 Tbsp store-bought tomato sauce
- 3 slices of Parmesan cheese (block), approx. 20g
Cooking Instructions
Step 1
Start by carefully separating the yolks from the whites of 3 fresh eggs into separate bowls.
Step 2
Using the egg whites, whip them with a whisk to create a stiff meringue. It’s crucial to achieve a voluminous and firm peak, so much so that the bowl can be inverted without the meringue sliding out.
Step 3
Gently fold the egg yolks and a small pinch of salt into the stiff meringue. Be very careful not to overmix, as this can deflate the meringue. The key is to incorporate them softly.
Step 4
Heat a non-stick pan over low heat and add 1 Tbsp of butter, coating the surface. Carefully pour the egg mixture into the pan, spreading it out evenly. It should look like a fluffy cloud of egg.
Step 5
Maintaining low heat, cook the omelette for about 1 minute until the bottom begins to set lightly.
Step 6
Cover the pan with a lid and continue to cook on low heat for an additional 2 minutes. This steaming process will ensure the inside cooks gently.
Step 7
Once the bottom of the omelette is golden brown and the edges start to puff up, carefully add 1 Tbsp of butter around the edges of the pan. Let it melt and coat the bottom. This step adds richness and a delightful crispiness. (Refer to the video for a visual guide on this technique.)
Step 8
Cook for another minute after adding the butter. Then, cover again with the lid and cook for 1 more minute to ensure it’s perfectly cooked through.
Step 9
Gently fold the cooked soufflé omelette in half onto a plate. Top generously with the prepared sauce, and your magnificent brunch is ready to be enjoyed!
Step 10
(Optional) To make the sauce: Melt 1 Tbsp of butter in a small saucepan over low heat. Add 3 Tbsp of tomato sauce and 3 slices (approx. 20g) of Parmesan cheese. Stir gently and simmer until the cheese is melted and the sauce has thickened slightly.
