Fragrant and Refreshing Celery Leaf Salad

It’s delicious eaten raw with a dip in yogurt, and it’s great in dishes like a potato, spinach, and chicken breast soup that’s good for boosting children’s immunity. The leaves, in particular, transform into a wonderfully fragrant side dish! Plus, it’s so affordable – I always pick some up at Trader Joe’s for around $2-$3. I’ve posted about it before, but today I’m going to share a more detailed recipe. While I was making spinach frittata, I quickly whipped up this celery leaf salad!

Ingredients

  • Appropriate amount of celery leaves
  • 1 pinch of salt
  • 1 Tbsp perilla oil (deulgireum)
  • A little toasted sesame seeds
  • A little minced garlic

Cooking Instructions

When you buy celery, trim the stalk into bite-sized pieces, wrap them in paper towels, and store them in an airtight container in the refrigerator. Keep the leaves in a separate bag to maintain their freshness. The amount of leaves from one celery stalk isn’t large, making it perfect for a side dish for one or two meals.

Bring water to a boil in a pot, adding 1/2 teaspoon of salt.

Once the water is boiling, add the celery leaves and blanch them for just 30 seconds to 1 minute. Be careful not to overcook them, or they’ll become mushy!

Immediately rinse the blanched celery leaves under cold water to cool them down. Then, firmly squeeze out all the excess water. Draining well prevents the salad from becoming watery and bland. Chop the leaves into 2-3 pieces for easier eating.

To the drained celery leaves, add a pinch of salt, minced garlic, toasted sesame seeds, and 1 tablespoon of nutty perilla oil.

Gently mix everything together with your hands until well combined. Your delicious celery leaf salad is ready! Taste and add a tiny bit more salt if needed.
