Ingredients
  • Fresh Hallabong (flesh only, seeds and rind removed) 600g
  • Organic white sugar 250g
  • Fresh lemon juice 2 Tbsp
  • Pinch of salt (approx. 0.2 tsp)

Cooking Instructions

Step 1

First, thoroughly wash the Hallabong. Peel the fruit, carefully remove all seeds, and prepare only the pulp. It’s best to ensure no bitter rind or seeds end up in your jam.

Step 2

Place the prepared Hallabong pulp into a blender and process until smooth. Alternatively, you can leave it slightly chunky for a bit of texture in the jam.

Step 3

Now, pour the blended Hallabong into a saucepan. Add the organic sugar and salt, and mix well. Begin heating over high heat until it starts to boil.

Step 4

Once the jam begins to bubble vigorously, skim off any foam that rises to the surface with a spoon. This step helps maintain a clean flavor and clear color for your jam. To prevent sticking to the bottom, stir continuously with a spatula as it cooks.

Step 5

Continue to simmer the jam until it reaches a thick consistency. Making jam often requires a longer cooking time than you might expect, allowing the moisture to evaporate and create a rich texture.

Step 6

When your jam reaches the desired consistency, stir in the 2 Tbsp of fresh lemon juice and simmer for another brief moment to finish. Lemon juice enhances the flavor and helps preserve the jam. Once finished, transfer the hot jam into sterilized jars for storage.
