Ingredients- 200g Cake Flour
- 40g Almond Flour
- 10g Earl Grey Tea Powder
- 5g Baking Powder
- 100g Cold Unsalted Butter, cut into cubes
- 30g Sugar
- 1 large Egg
- 60g Cold Milk
- 50g Chocolate Chips
Cooking Instructions
Step 1
In a food processor, combine the cake flour, almond flour, Earl Grey tea powder, baking powder, and sugar. Pulse 10-15 times until evenly mixed. Add the cold, cubed butter and pulse repeatedly, stopping and starting the processor, until the butter pieces are about the size of small peas and no longer visible. This step is crucial for achieving a flaky and crisp scone.
Step 2
Once the butter is incorporated, add the egg and pulse again, stopping and starting, until just combined. Then, pour in the cold milk. Process until the mixture just begins to come together into a cohesive dough. Be careful not to overmix, as this can develop the gluten and result in tough scones. Stop as soon as a rough dough forms.

Add the chocolate chips to the dough. Pulse the food processor a couple of times, just to distribute the chocolate chips evenly throughout the dough. Avoid over-processing, which can break down the chocolate chips.

Transfer the dough to a plastic wrap, flatten it into a disc, and refrigerate for at least 1 hour. This chilling period firms up the butter again, which is essential for creating a flaky texture when baking, and makes the dough easier to handle.

Lightly flour your work surface with extra flour. Unwrap the chilled dough. If the dough is sticky, use more flour. Roll out the dough with a rolling pin to about 1.5-2 cm thickness. Then, perform a ‘three-fold’ (like folding a letter) by folding one-third of the dough over the middle, and then folding the remaining third over that. You can adjust the number of folds to your preference; more folds can create more layers.
Step 6
Gently roll out the dough once more to your desired thickness. Cut the dough into your preferred shapes – triangles, squares, or use cookie cutters for rounds. Prepare an egg wash by whisking together the egg yolk and 1 teaspoon of milk. Brush the tops of the scones generously with the egg wash.
