Introducing a basic seasoned salad recipe using fresh chamnamul that anyone can easily make. It enhances the inherent fragrant flavor of chamnamul, making it a perfect side dish to stimulate your appetite.
Main Ingredients- 350g Chamnamul (Korean Pimpinella)
- A small amount of the white part of a green onion
- 1 tsp salt (for blanching)
Seasoning- 2/3 tsp salt (or regular salt)
- 1 tsp minced garlic
- 1 Tbsp sesame oil
- A pinch of sesame seeds

Cooking Instructions
Step 1
Prepare the fresh chamnamul. First, carefully remove any yellowed, bruised, or wilted leaves to trim it. Rinse thoroughly and set aside.
Step 2
Fill a pot with plenty of water and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add 1 teaspoon of salt for blanching. Adding salt will help the namul retain its vibrant color and crisp texture.
Step 3
Add the trimmed chamnamul to the boiling water and blanch it for a very brief 20 seconds. Be careful not to overcook it, as it can become mushy! Immediately remove the blanched chamnamul and rinse it in cold water 2-3 times to cool it down. Finally, squeeze out as much water as possible by hand. Properly squeezing out the water prevents the seasoning from becoming watery and ensures it adheres well.
Step 4
Finely mince only the white part of the green onion. This step prepares the aromatic vegetable to add to the salad.
Step 5
Cut the thoroughly squeezed chamnamul into bite-sized pieces. About 4-5 cm in length is usually good. In a bowl, combine the chopped chamnamul with the finely minced green onion and all the prepared seasonings (salt, minced garlic, sesame oil, sesame seeds). Now, using your hands, toss and mix vigorously! Ensure the seasoning is evenly distributed throughout the namul. *Adjust the amount of salt according to your taste. It’s best to taste as you go and add more salt gradually to achieve the desired flavor.*
