  • 1 Tbsp cooking wine (mirin or sake)

Let’s start by preparing the ingredients for the chives and egg roll. The ingredients are simple, but the taste is superb! Prepare 5 fresh eggs and about 5 tablespoons of finely chopped chives. Using plenty of chives makes it even tastier!

Now it’s time to make the egg mixture. Crack 5 eggs into a bowl, add 0.3 tsp of salt (a pinch) and 1 Tbsp of cooking wine. The cooking wine helps to remove any eggy smell and enhances the flavor. Whisk gently until well combined.

Add the finely chopped chives to the egg mixture and stir. This completes the preparation for your delicious egg roll. It’s truly simple, isn’t it? If you’d like to add some color, you can also add a small amount of finely minced carrot. Set this egg mixture aside for now.

Using a square or rectangular pan makes it much easier to create a nicely shaped egg roll. This is because you can spread the egg mixture evenly to create a consistent thickness. Lightly oil a heated pan, then use a paper towel to wipe the oil thinly across the entire surface. Reduce the heat to medium-low – this is crucial. Pour a thin layer of the prepared egg mixture into the preheated pan.

Once the surface of the egg mixture begins to set, carefully fold one end of the egg over towards the center. (If the heat is too high, the egg will burn or won’t roll nicely, so be sure to maintain low or medium-low heat!) Slide the rolled portion towards the edge of the pan and pour the remaining egg mixture into the empty space.

As the newly poured egg mixture starts to cook on top, roll it up from the edge again in the same manner. Repeat this process until all the egg mixture is used up. Continue layering and rolling to achieve your desired thickness for the egg roll.
