I’ve made a Chwinamul salad, known for its beneficial properties in helping the body excrete excess salt. Enjoy the fresh, earthy flavors of spring with this simple yet satisfying dish.
Ingredients
- Chwinamul (Aster Scaber) 1 bundle (approx. 200g)
- Scallion 1 stalk
Seasoning
- Minced garlic 1 Tbsp
- Doenjang (Korean soybean paste) 2/3 Tbsp
- Sesame oil 1 Tbsp
- Plum extract (Maesil-cheong) 1 Tbsp
- Toasted sesame seeds 1 Tbsp

Cooking Instructions
Step 1
First, trim any rough or wilted parts from the Chwinamul and rinse it thoroughly under cold water. Bring a pot of water to a rolling boil with a pinch of salt (about 1/2 tsp). Add the prepared Chwinamul to the boiling water and blanch for about 1-2 minutes until it becomes tender but still retains a slight bite. Be careful not to overcook, as it can become mushy. Immediately rinse the blanched Chwinamul under cold water to stop the cooking process and cool it down. Gently squeeze out as much excess water as possible. Properly draining is key to preventing the salad from becoming watery and ensuring the flavors meld well.
Step 2
In a mixing bowl with the drained Chwinamul, finely chop the scallion and add it. Now, add all the seasoning ingredients: minced garlic (1 Tbsp), Doenjang (2/3 Tbsp), sesame oil (1 Tbsp), plum extract (1 Tbsp), and toasted sesame seeds (1 Tbsp). Since Doenjang is already salty, you won’t need to add any extra salt. The plum extract will add a subtle sweetness and help balance the flavors.
Step 3
Gently mix everything together with your hands, ensuring the Chwinamul and seasonings are well combined. Be tender when mixing so you don’t mash the greens. The savory depth of the Doenjang, the nutty aroma of the sesame oil, and the hint of sweetness from the plum extract create a wonderfully balanced and delicious Chwinamul salad. It’s a perfect side dish for any meal, especially refreshing when you need a light and flavorful dish.
