Ingredients- Cake flour 110g (sifted twice)
- Almond flour 75g (finely ground)
- Powdered sugar 60g (for the dough)
- Unsalted butter 100g (softened at room temperature)
- Salt 1g (adjust to taste)
- Egg yolk 1 (at room temperature)
- Earl Grey tea leaves 6g (ground into a fine powder, or use tea bags)
- Plenty of powdered sugar (for coating)
Cooking Instructions
Step 1
Before you begin baking, please prepare all your ingredients. Take the butter and egg yolk out of the refrigerator to come to room temperature. Sift the cake flour and almond flour together into a bowl. Preheat your oven to 180°C (350°F).

Add all the sifted cake flour and almond flour to the bowl. Using a spatula or scraper, gently mix until no dry flour is visible. This is key to creating a tender cookie; avoid overmixing, as it can lead to a tough texture.
