Rice Ingredients

  • 3-4 cups Rice
  • 30g Dried Gondre

Flavorful Seasoning Sauce

  • 4 Tbsp Soy Sauce
  • 2 Tbsp Soup Soy Sauce
  • 1 Tbsp Gochugaru (Korean Chili Flakes)
  • 1 Tbsp Plum Extract
  • 0.5 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • 1.5 Tbsp Chopped Scallions
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Begin by preparing approximately 30g of dried gondre. Place the dried gondre in a large bowl and cover it with plenty of water. Soak it for at least 8 hours or overnight. Soaking it the evening before is the most convenient method.

Once the gondre is fully rehydrated, transfer it to a pot and add enough water to cover. Boil it over high heat for about 40 minutes until it becomes very tender. Ensuring it’s thoroughly cooked is key.

After boiling, let the gondre cool down naturally in the pot. Avoid rinsing it with cold water immediately, as this can make it tough again. Simply turn off the heat and leave it undisturbed until it cools.

While the gondre is cooling, wash and soak the rice you’ll use for the rice. Rinsing the rice and letting it soak for about 30 minutes will result in fluffier, more perfectly cooked rice.

Once the gondre has cooled sufficiently, lightly rinse it under running water to remove any residue, and then gently squeeze out as much water as possible by hand. Now, add the rinsed rice to your rice cooker. Crucially, use only half the amount of water you would normally use for cooking rice. Gondre releases moisture as it cooks, so adjusting the water level is essential for the best texture.

Arrange the prepared gondre evenly over the rice. Cook the rice using your rice cooker’s standard white rice setting. While the rice is cooking, let’s prepare the delicious seasoning sauce. In a small bowl, combine the soy sauce, soup soy sauce, gochugaru, plum extract, minced garlic, sesame oil, chopped scallions, and toasted sesame seeds. For extra flavor, you can add finely chopped chili peppers, chives, or even wild chives (dalrae) for a truly special sauce.
