Galette Dough Ingredients

  • 45g egg yolks (approx. 3 yolks)
  • 150g cake flour (low-gluten flour)
  • A little vanilla oil
  • Zest of 1 fresh orange (only the orange part of the peel)

Essential Seasonings & Ingredients

  • 125g cold unsalted butter, cut into small cubes
  • 90g granulated sugar
  • A pinch of fine salt

Cooking Instructions

Step 1

First, in a bowl, combine the softened butter with granulated sugar. Cream them together until no sugar granules are visible and the mixture is light and fluffy. Tip: If your butter is too hard straight from the fridge, you can speed up the softening process. Gently warm about 2/3 of the butter in a pan until just melted, then mix it with the remaining cold, cubed butter. This allows you to work with softened butter without waiting for it to reach room temperature.

Add the beaten egg yolks (45g, about 3 yolks) to the butter mixture and mix well until incorporated. At this stage, also add a pinch of fine salt for flavor enhancement and a few drops of vanilla oil for aroma.

Sift the cake flour into the bowl. Using a spatula, gently mix the flour into the wet ingredients until just combined. Be careful not to overmix, as this can develop the gluten and result in tough galettes.

When the dough is about halfway combined with the butter, add a generous amount of fresh orange zest. Ensure you only use the orange part of the peel, as the white pith can impart a bitter taste.

Lightly dust your work surface with flour. Roll out the dough to an even thickness of about 7mm. To prevent the dough from sticking to your cookie cutters or molds, dust them with flour as well. Cut out or shape the dough into your desired galette sizes. I used a small round cutter to create charming mini galettes.

To prevent the bottoms of the galettes from browning too quickly, it’s a good idea to place a second baking sheet underneath the one holding the galettes. This helps to distribute the heat more evenly and ensures a more consistent bake.

Brush the tops of the prepared galettes evenly with the egg wash (1 egg yolk mixed with 1 tablespoon of water). Once the egg wash has slightly set, use a fork to gently create a decorative pattern. Bake in a preheated oven at 170°C (340°F) for approximately 20-25 minutes, or until the galettes are a beautiful golden brown. Enjoy your fragrant orange galettes!
