Ingredients
  • 3 handfuls of fresh Korean rapeseed greens (yu chae namul)
  • 1 tsp coarse salt (for blanching)
  • 1 Tbsp chopped green onions
  • 0.5 Tbsp minced garlic
  • 0.5 tsp salt (for seasoning)
  • 1 tsp sesame oil
  • A pinch of sesame seeds

Cooking Instructions

Step 1

Bring a pot of water to a rolling boil. Add 1 teaspoon of coarse salt to the boiling water – this helps the greens maintain their vibrant green color. Carefully submerge the washed rapeseed greens, starting with the stems, into the boiling water for about 20 seconds. This brief blanching is key to retaining their crispness. Immediately remove the blanched greens and rinse them under cold running water to stop the cooking process and cool them down.

Step 2

Once cooled, gently squeeze out as much excess water as possible from the rapeseed greens using your hands. Excess moisture can dilute the seasoning. After draining, cut the greens into bite-sized pieces, approximately 2-3 inches long, and place them into a mixing bowl.

Step 3

Now it’s time to season. Add the chopped green onions (1 Tbsp), minced garlic (0.5 Tbsp), salt (0.5 tsp), fragrant sesame oil (1 tsp), and a sprinkle of sesame seeds to the bowl with the greens. Gently toss and mix everything together with your hands until the greens are well-coated with the seasoning. Taste and adjust the salt if needed. Your delicious and aromatic rapeseed greens salad is now ready to be served!
