Ingredients- 200g cake flour
- 200g granulated sugar
- 200g unsalted butter
- 200g eggs (room temperature)
- 1 lemon
- 4g lemon zest
- 4g baking powder
- 1g salt

Step 1 Prep: Measure ingredients, prepare molds & start double boiler.
– Sift together cake flour, baking powder, sugar, and salt.
– Lightly grease the madeleine molds with butter.
– Prepare a double boiler by bringing water to a simmer in a pot for melting the butter.

In a bowl, combine the sifted cake flour, baking powder, sugar, and salt. Sifting these dry ingredients beforehand helps prevent lumps and ensures a smoother batter.

Add the room-temperature eggs to the bowl containing the sifted dry ingredients and mix them together.

Using a whisk, stir until the eggs and dry ingredients are well combined and the mixture is smooth, free of lumps. Aim for a consistency similar to thin pancake batter.

Place the butter in a small saucepan and set it over the simmering water of your double boiler. Gently melt the butter until it’s liquid. Be careful not to overheat it; just melt it until the lumps disappear.

Thoroughly wash the lemon. Using a microplane or a vegetable peeler, finely grate the zest from the lemon peel. Avoid grating the white pith, as it can impart a bitter flavor.

Juice the lemon (halved) into the batter. Then, add the prepared lemon zest and stir well to incorporate everything evenly. You’ll immediately notice a wonderful, fresh lemon fragrance!

Pour the melted butter (from the double boiler) into the batter and mix gently until fully incorporated. Once all ingredients are combined, cover the bowl with plastic wrap and let it rest at room temperature for about 20 minutes. This resting period allows the flavors to meld beautifully.

While the batter is resting, lightly grease your madeleine molds. Brush a thin, even layer of butter inside each cavity. This ensures that the madeleines release easily after baking.

Transfer the rested batter into a piping bag. Fill each madeleine mold to about 80% capacity. Avoid overfilling, as the batter will puff up during baking and could spill over.

Gently tap the filled madeleine pan on your work surface a few times. This helps to release any large air bubbles trapped in the batter. Bake in a preheated oven at 190°C (375°F) for 12 to 15 minutes, or until the tops are golden brown.
