Simple & Delicious Low-Carb Lemon Madeleines
These are incredibly simple yet wonderfully delicious and aromatic keto lemon madeleines. Just one is enough to satisfy your dessert cravings! This recipe yields approximately 13 madeleines. Each piece contains about 9.7g fat, 1.8g net carbs, and 2.9g protein. (Note: Tapioca starch and arrowroot starch are considered resistant starches with minimal absorption, so they are excluded from carb counts. Monk fruit sweetener is also excluded as it’s not absorbed and has zero calories. Please keep this in mind!)
Basic Ingredients
- 120g Almond flour
- 20g Tapioca starch
- 5g Baking soda
- 70g Melted unsalted butter
- 2 Fresh eggs
- 10g Allulose (sweetener)
- 50g Monk fruit sweetener
- 30g Freshly squeezed lemon juice

Cooking Instructions
Step 1
Start by combining all the prepared ingredients in a large bowl. The order of addition doesn’t matter; simply mix everything together. Don’t worry if the batter seems a bit thin at first – this is normal. Stir until all ingredients are well incorporated.
Step 2
Using a piping bag or a spoon, fill your madeleine molds with the batter, leaving about 80% to 90% of the space. Filling them too full can cause them to overflow during baking, so be mindful of the quantity.
Step 3
Don’t stress about making the batter look perfectly placed in the molds. Once filled, gently tap the baking sheet or pan on your counter a few times. This simple action will help level the batter surface, creating beautifully shaped madeleines.
Step 4
Now it’s time to bake! Place the madeleine molds in your air fryer and bake at 175°C (350°F) for 3 minutes. Then, reduce the temperature to 160°C (320°F) and bake for an additional 2 minutes. Baking times and temperatures may vary depending on your air fryer model, so keep an eye on them. While the tops might look golden, the bottoms can brown more quickly. Gently flip a madeleine to check the color of the underside and bake a little longer if needed.
Step 5
Once the madeleines have cooled slightly, carefully use a skewer or chopstick to gently lift the edges and remove them from the molds. Be cautious as they can still be quite hot.
