Begin by thoroughly washing the fresh minari under running water. Trim off any wilted leaves or overly thick stem ends. Pay special attention to cleaning the root portion, as it can hold onto soil.

Fill a pot with plenty of water and bring it to a rolling boil over high heat. Once boiling, add 1 tablespoon of salt to the water. Adding salt helps to brighten the minari’s color and also has a sterilizing effect. Carefully add the prepared minari to the boiling water and blanch it very briefly, just for about 15-20 seconds.

Blanching for a short time is key to maintaining a crisp texture; overcooking will make the minari mushy. Immediately remove the blanched minari from the boiling water and plunge it into cold water to stop the cooking process and cool it down. Rinsing in cold water enhances its crunchiness. Gently squeeze out as much water as possible. Finally, cut the minari into bite-sized pieces, about 5cm (2 inches) in length.

Now, let’s prepare the delicious seasoning. In a bowl, combine 1 tablespoon of gochujang, 1/2 tablespoon of minced garlic, and 1 tablespoon of oligodang (adjust sweetness to your preference). Also, have a drizzle of sesame oil ready for richness and some toasted sesame seeds for garnish.
