Fragrant Mocha Seo-ri-tae Biscotti
Make Healthy and Delicious Seo-ri-tae Mocha Biscotti with an Air Fryer (Using Almond Flour, Whole Wheat, and Rye)
I’m really enjoying home baking lately and trying my hand at making various healthy snacks for my husband. My aim is to create treats that are healthier than store-bought ones. They taste wonderful with a glass of milk!
Ingredients- 60g Butter, softened at room temperature
- 50g Cooked Seo-ri-tae (Korean soybean), husked
- 100g Almond flour
- 50g Whole wheat flour
- 50g Rye flour
- 5g Baking powder
- 75g Sugar
- 2 packets Coffee mix
- 1g Salt
- 1 Egg
Cooking Instructions
Step 1
Place 50g of seo-ri-tae beans, which you will peel, into a microwave-safe container.
Step 2
Loosely cover the container and microwave for 2-3 minutes. This process will cause the skins of the seo-ri-tae beans to puff up and loosen, making them easier to peel.
Step 3
Carefully peel off all the loosened skins, preparing the beans cleanly.
Step 4
Add a little water to a pot with the peeled seo-ri-tae beans and boil them again. This step will make the beans even softer.
Step 5
Drain the boiling water and lightly sauté the beans over low heat to evaporate any remaining moisture. Be careful not to burn them.
Step 6
In a large bowl, combine the almond flour, whole wheat flour, rye flour, baking powder, and 1g of salt. (I used the coffee mix to use it up, but it surprisingly added a nice coffee aroma and flavor!)

Optionally, you can add a handful of sesame seeds. (After making them, I found that omitting the sesame seeds was also fine. In fact, adding too many might contribute to crumbling.)

Crack 1 egg into the bowl with the dry ingredients.
Step 9
Melt 60g of butter gently using a double boiler (bain-marie). While the butter is melting, use a spatula or your hands to thoroughly mix the dry ingredients and the egg in the bowl, forming a dough. It might feel quite stiff at first.
Step 10
Pour the melted butter into the dough and mix everything together until well combined. It’s important to mix thoroughly so that no dry flour remains visible.
Step 11
Once the dough starts to come together, gently add the cooked seo-ri-tae beans and mix them in. Fold them in gently to avoid mashing the beans.
Step 12
Put on a pair of disposable gloves and gently knead the dough into a cohesive mass. Avoid overworking the dough; aim to just bring the ingredients together evenly.
Step 13
Once the dough forms a single mass, shape it by stretching it out to fit the size of your air fryer basket. You can shape it into a log or flatten it.
Step 14
This step is optional. I brushed the top of the biscotti with an egg wash made by whisking the egg with water from one packet of coffee mix. This helps achieve a lovely golden-brown color when baked.
Step 15
Place the shaped dough into your preheated air fryer and bake at 160°C (320°F) for 10 minutes, or until lightly golden brown on the surface.
Step 16
Remove the baked biscotti from the air fryer and let it cool completely. It’s important to let them cool thoroughly before slicing to prevent them from breaking apart.
Step 17
Once completely cooled, slice the biscotti into your desired thickness. Now, bake them again in two stages to achieve maximum crispiness. First, bake at 150°C (300°F) for 10 minutes. Then, flip them over and bake at 140°C (285°F) for another 10 minutes. This double baking ensures they are dry and crispy all the way through.

Your fragrant mocha seo-ri-tae biscotti, which are sweet, nutty, and wonderfully crisp, are ready! They are absolutely delicious when enjoyed with a glass of cold milk. Enjoy your healthy and tasty homemade treat!
