Main Ingredients
  • 1 block (approx. 300g) firm tofu
  • 2 Tbsp curry powder
  • 1 Tbsp pancake mix (or all-purpose flour)
  • 1 large egg

Cooking Instructions

Step 1

Cut the tofu into bite-sized pieces, about 2cm thick squares or rectangles. Lightly sprinkle salt on the surface of the cut tofu and let it sit for about 5 minutes. This helps to draw out excess moisture, making the tofu firmer and more flavorful. Gently pat the surface of the tofu dry with a paper towel.

Step 2

In a wide bowl, combine the 2 tablespoons of curry powder and 1 tablespoon of pancake mix. Stir until well combined and there are no lumps. Pre-mixing the powders makes it easier to coat the tofu evenly.

Step 3

In a separate bowl, crack the egg and lightly beat it to break the yolk and white strands. Do not add any salt to the egg mixture, as the salt on the tofu and the curry powder already provide sufficient seasoning. This helps to maintain a balanced flavor.

Step 4

Add the prepared tofu pieces to the bowl with the curry powder and pancake mix. Gently toss or use a spatula to coat each piece of tofu evenly with a thin layer of the powder mixture. Be careful not to apply too thick a coating, as it can result in a dry texture.

Step 5

Dip each coated tofu piece into the beaten egg, ensuring it’s fully coated. Heat a generous amount of cooking oil in a pan over low heat. Carefully place the egg-coated tofu pieces into the hot pan, ensuring they don’t overlap. Cooking over low heat allows the tofu to cook through and brown slowly without burning.

Step 6

Once one side of the tofu is golden brown, flip it over and cook the other side until equally golden brown. Ensure the tofu is cooked through and the exterior is nicely crisp. You’ll notice the delicious, savory aroma of curry starting to fill the air.

Step 7

Arrange the beautifully cooked curry tofu on a serving plate. For an extra touch of color and freshness, garnish with finely chopped scallions or blanched broccoli florets. Serve immediately while warm for the best taste and texture!
