Essential Ingredients- 1 ripe peach
- 1 fresh lemon
- 1.5 cups (approx. 250ml) sparkling water
- 1 cup (approx. 200ml) still water
- 5 sheets of gelatin

Cooking Instructions
Step 1
First, it’s important to thoroughly remove any wax from the lemon peel. Generously sprinkle coarse salt over the lemon’s surface and rub it firmly with your hands. Then, gradually pour hot water over it while rinsing to effectively remove the wax. After cleaning, pat the lemon dry and thinly slice it into rounds. Wash the peach thoroughly, then cut it into 4 equal wedges around the pit.
Step 2
Next, thinly slice the peach wedges, keeping the skin on. Using the skin adds beautiful color and intensifies the peach flavor. Aim for slices about 0.5 cm thick for consistency.
Step 3
Place the prepared lemon and peach slices into a large bowl. Add 5 tablespoons of granulated sugar and mix well to coat the fruits evenly. The sugar will help draw out the fruit’s natural juices, deepening the flavor.
Step 4
Pour 1.5 cups of cold sparkling water into the bowl with the fruit and sugar mixture. The crisp fizziness of the sparkling water will enhance the refreshing taste of the peach and lemon. (If you don’t have sparkling water, you can use plain soda water. If using sweetened soda like Sprite or 7-Up, reduce the sugar by about 1-2 tablespoons). Let this mixture sit for about 10 minutes, allowing the sugar to dissolve completely and the fruit flavors to infuse into the water.
Step 5
While the fruit mixture is infusing, prepare the gelatin. In a separate bowl, pour 1 cup of still water and add 5 sheets of gelatin. Let them soak for about 5 minutes until they become soft and pliable. Soaking gelatin in cold water ensures it dissolves smoothly without clumps.
Step 6
Gently drain any excess water from the softened gelatin sheets. Place the gelatin in a small saucepan and heat over medium-low heat for about 30 seconds, just until it completely dissolves. Be careful not to boil it. Once dissolved, immediately remove from heat and pour the liquid gelatin into the fruit and sparkling water mixture. Stir well to ensure the gelatin is evenly incorporated.
Step 7
For an extra tang, you can mash a few of the reserved lemon slices and squeeze their juice into the mixture at this stage. This will further enhance the tartness, creating an even more delightful dessert.
Step 8
Arrange the peach slices attractively in your serving bowls or glasses. Gently pour the pudding mixture over the peaches. Pouring slowly helps maintain the arrangement of the fruit. Cover the bowls with plastic wrap and refrigerate for at least 1 hour, or until the pudding is fully set. Once firm, your refreshing peach pudding is ready to be enjoyed!
