  • 1/2 sweet onion
  • 2 red chili peppers

Seasoning Sauce

  • 1/4 cup anchovy sauce (fish sauce)
  • 1/4 cup soy sauce
  • 1.5 Tbsp minced garlic
  • 3g minced ginger
  • 7 Tbsp chili powder (gochugaru)
  • 2 Tbsp plum extract (maesilcheong)
  • 1/2 cup kelp broth
  • 2 Tbsp toasted sesame seeds

Trim the tough ends of the perilla leaves. Soak them in water mixed with 1 Tbsp vinegar and 1/2 Tbsp salt for at least 15 minutes to ensure freshness.

While the perilla leaves are soaking, prepare the kelp broth. Add a piece of dried kelp to 1/2 cup of water and let it steep for about 15 minutes. Strain and set aside the broth.

Peel the onion, cut it in half, and then thinly slice it. For the red chilies, remove the seeds, cut them in half lengthwise, and then finely chop them. This preparation ensures the seasoning is evenly distributed.
